Starch content is one of the important indexes of potato quality.Using starch processing potato varieties that with "early, middle and late" different growth stage, and harvesting in different periods have certain practical significance for improving starch processing efficiency and benefit to potato processing enterprise。By the method of randomized block,we have researched different tuber yield; starch content and the dynamic differences of starch yield of three different maturity stage potatoes (eyinshu1, longyinshu1, hailun3) introduced from Russia in lindian county of Heilongjiang province , we demonstrate that: 1. The yield is in keeping with the postpone of harvest stage, and the yield order of these three potato from high to low is: longyinshu1> eyinshu 1> hailun3.2. The market tuber weight percentage first increased,then decreased with a parabola trend change. 3. The starch content order of these three potatoes from high to low is: hailun3>eyinshu 1>longyinshu1. The starch content first increased,then decreased with a parabola trend change. The starch content dynamic change of eyinshu1in late growth stages is same with hailun3, they both show 8.17> 8.24>8.10>9.7>8.31. But longyinshu1 show 8.17>8.24>8.31>8.10>9.7.4. The starch yield of these three potatoes from high to low is: hailun3>eyinshu 1>longyinshu1.starch yield is in keeping with the postpone of harvest stage.and the fastest rate appears at 8.31 and 9.7. 5. The dynamic changes of starch viscosity, gelatinization point and starch whiteness of these three potatoes are different. starch viscosity increases gradually with the trend of waviness. gelatinization point is in keeping with the postpone of harvest stage, and the later stage increases relatively quick. The whiteness first decreased,then increased with the trend of Concave curve.
