The experiment was conducted to choose the kinds of carbohydrate and carbohydrate level as experimental factors respectively, with single-factor randomized design. The pure nutrition diets designed with casein and gelatin as protein, with corn oil and clupeoid oil as lipid. The feeding experiment lasted 60 days, then samples were collected and analyzed. The study researched about which carbohydrate and what level of carbohydrate is fit for the juvenile Chinese sturgeon. The results obtained can be briefly summarized as follows:1. Experiment of different carbohydrates420 texting fishes were raised and assigned into 7 groups, one group had 60 fishes with three repetitions. Fish were fed with one of seven iso-protein (42% crude protein) and iso-nitrogenous (10% crude lipid) experimental diets containing glucose, fructose, maltose, sucrose, dextrin, potato starch and corn starch for 60 days. The results indicated that, SGR and PER of the groups which fed with glucose, dextrin, potato starch, corn starch and maltose were significant higher than which fed with fructose and sucrose (P<0.05). FC of the groups which fed with glucose, dextrin, potato starch, corn starch and maltose were significant smaller than which fed with fructose and sucrose (P<0.05). The growth performance didn't have significant difference between the fish which fed with fructose and sucrose. The lipid content of whole body didn't have significant difference among all the experiment fish. TG, TCH and TP of the fish which fed with fructose and sucrose were significant smaller than the other experiment fish. TG, TCH and TP of the fish which fed with potato starch and corn starch were significant higher than the other experiment fish. The using ability of carbohydrate is that: glucose = dextrin > potato starch = corn starch = maltose > fructose = sucrose.2. The growth experiment was conducted in arecirculating rearing system juvenile of the Chinese sturgeon with initial weight (9.39±0.97)g. Fish were fed with nine iso-nit- rogenous (37% crude protein) and iso-nitrogenous (9% crude lipid) experimental diets containing five levels of dextrin (0%, 10%, 20%, 30% and 40%) and four levels of α-starch (10%, 20%, 30% and 40%), respectively. The result indicated that:1) There was smallest FC, highest SGR, PER and ADC of dextrin when 20%-30% of dextrin and α —starch contained in the diets. When 30% dextrin contained in the diets, the percent of lipid in liver was highest and HIS was biggest. When 30% α —starch contained in the diets, the percent of lipid in muscle was highest.
