In this paper the rice varieties were to be used as the experimental material, which have the different activity of lipases and lipoxygenase. the change characteristics of rice quality,the rice bran steadied and affection of no LOX-3 on storage insects during the storage were studied. The results were as follows:1. The paddy were stored in thirteen and twenty-five months, results indicated: Along with the increase storing time, the content of free fatty acid (FFA)and the conductance were increased, but the germination trend and the germination percentage decreased. The content of FFA was correlative negatively with the germination trend and the germination percentage significantly(P<0.01), and the same relation between the conductivity and the germination trend and the germination percentage. The character'indexes of rice varieties is different significantly.The samples lacking lipases and lipoxygenase,which FFA and the conductance were lower,had better endurance, specially chongtui is had 67.3 germination percentage in twenty-five months in storehouse. However, The samples unlacking lipases and lipoxygenase which FFA and the conductance were higher, had worst endurance. For example:several varieties ( M3122,D934,D952 ) had almost 0 germination percentage under the same condition.2. Comparing the content of FFA in rice bran of different lipase activity of rice varieties, the results showed that the lipase activity was different significantly in rice bran, the same to the free fatty acid content. There ware very different of lipase activity in rice bran initially, the highest of lipase activity is 31U of sample D934, the lowest is 12Uof sample D852.When rice bran storing the temperature to serve as 20℃,and it along with storing time lengthens, the free fatty content had slowly increased. The highest of free fatty acid content was increased 27.9mgNaOH/100g of D934, the least was 17.6 mgNaOH/100g of D852. Whereas, when the storing temperature moving upward to 40℃,the free fatty content had clearly enlarged, and it along with storing time lengthens, the free fatty acid content of D934 increased best was 41.4mgNaOH/100g, the D852 increased least was 25.9mgNaOH/100g. Comparing the free fatty acid content of rice varieties: lipase activity was higher, the free fatty acid content was higher .The rice varieties of lowly lipase activity were steadier than the higher lipase activity varieties. It was feasible to enhance the rice bran stabilization by selecting rice variety with lowly lipase activity.3. Researching the relation about the absence of lipoxygenase (Lox-3) (EC.1.13.11.12),the percentage of gaping glume (PGG) and the percentage of moth-eaten storage loss of rice varieties, The results indicated:①The percentage of moth-eaten loss of the lacking Lox-3 rice varieties were lower than unlacking Lox-3. Under 13 months in storehouse, the lowest percentage of moth-eaten loss were 0 of the rice varieties D857和chongtui of lacking Lox-3 , The highest percentage of moth-eaten loss was 6.12% of the rice varieties of unlacking Lox-3. Under 25 months in storehouse, the lowest percentage of moth-eaten loss were 4% of the rice varieties lacking Lox-3, The highest percentage of moth-eaten loss was 22.4% of the rice varieties of unlacking Lox-3. In addition, investigating the percentage of gaping glume (PGG) and the percentage of moth-eaten storage loss of rice varieties in storehouse, the result showed that it was positive correlation between the PGG and he percentage of moth-eaten loss.②Using paddy and brown rice drew on Rhizopertha dominica and Sitophilus zeamais in biochemistry test. The result shows the Lipoxygenase LOX-3 affected the insects acting: the rice varieties without Lipoxygenase LOX-3, the percentage of moth-eaten storage loss is lower, contrarily, the percentage is higher. Moreover, it was significant positive correlation between the PGG and he percentage of moth-eaten loss in rice varieties.Summing up the above states, the paper demonstrated the rice varieties with lower lipase activity prolonging rice natural life, increasing grain endurance and enhancing the rice bran stability, and with the absence of lipoxygenase LOX-3 lightening insects infraction in certain extent. It is vital to insure food supplies safety.
