With the improvement of living standard and rapidly living pace, a new food type which is full-of-nutrient, convenient, hygiene and originally-from-nature—fresh-cut vegetable is more and more popular. As a hydrophytic vegetable with abounding nutriment, lotus root is broadly and highly produced in many part of China. Therefore, the processing technology of fresh cutting has a marvelous market prospect. However, because of its special physiological structure, the mechanical and browning cost during processing and harvesting reduce the output. Therefore, it is important to quality control of rational design of lotus root fresh-cutting equipment and fresh-cutting process through experimenting and researching the relative mechanical feature of lotus root.Based on national and international researches on materiel characteristics, I brought forth the experimental outline of testing mechanical characteristics of lotus root. Compressing experiment and cutting experiment were carried out on the omnipotent material trial machine, and rupture force and cutting force were obtained respectively. A single factor trial method is used for compressing mechanical experiment, loading velocity and ripe rate of lotus root set as factor separately, rupture force set as index. The linear equation is built about loading velocity and rupture force, the nonlinear equation is also built with ripe rate and rupture force. The results show that: compressing characteristic of lotus root has a prominent correlation with loading velocity and the same time it depends on the ripe rate of lotus root. To the Incising mechanical experiment, first, a single factor trial method is used for the relation of incising force among loading velocity, knife-edge angle and ripe rate, and obtained three regression equations of them. Then, three factors (loading velocity, knife-edge angle and ripe rate) and one index (incising force) are used to incising experiment through quadratic rotational combination design which is adopted to integrated discussing all factors' influence to incising force, a quadratic regressive model is found by quantitative and quantitative analysis.Focused on browning of fresh-cut lotus root, this paper probes the influence of the key parameters of fresh-cut machine to control the browning. The influence of three factors (Knife-edge angle, sliding cutting, angle and rotate speed of cutterhead) to browning degree in a week is discussed by using orthogonal experiment. The result shows that knife-edge angle has mostly influenced on browning degree, secondly the rotate speed of cutterhead and sliding cutting angle has the least influence to browning degree. A regression equation was created and used, an optimal method can be achieved: 10°blade angle, 540r/min rotate speed, 64°incising angle.
