Theaflavins are plant phenol pigments which have the benzotropolone structure, and exhibit a stronger biological activity. The research indicated that, the theaflavins have many kinds of pharmacology function, in particular ester type theaflavins. This article mainly researched mechanism and impact factors of the formation of ester type theaflavins by chemistry oxidation systemicly for the first time. The research of reaction condition influence on formation of ester type theaflavins by chemistry oxidation indicated that, the 40mg.ml-1 of oxidant concentration, the 70mg.ml-1 of tea polyphenol concentrate, reaction time(alkali oxidation 45min, acidic oxidation 35min), reaction temperature(alkali oxidation 45℃,acidic oxidation 55℃), and reacting system pH value(alkali oxidation 7.5, acidic oxidation 5.5) is advantageous to the formation of ester type theaflavins by chemistry oxidation. And two new chemical oxidants were screened out. The factor models of ester type theaflavins by chemistry oxidation system's response condition were established. The research of reactant influence on formation of ester type theaflavins by chemistry oxidation indicated that, the influence of EC to the of formation of ester type theaflavins is smaller, EGC was advantageous to the ester type theaflavins formation, EGCG and ECG were advantageous to the formation of double ester type theaflavins and monoester theaflavins, caffeine and protein were disadvantageous to the ester type theaflavins formation, when the quality ratio of confine, protein and catechin was 1: 1, caffeine and protein were of the smallest inhibitory action to the formation of ester type theaflavins, and the complexion action of confine, protein, caffeine and ester type theaflavins existed competition and cooperation effect; And the possible products by catechin chemistry oxidation were summarized.On the chemical reaction essence and mechanism of catechin and non- caffeine ingredient, this research discussed the formation of ester type theaflavins, which provided the theory basis and instruction for the formation and concentrate of the ester type theaflavins, and was advantageous to the development of theaflavins' healthy product and the drugs.
