A Comparative Study On Physicochemical Properties Of The Oviducts In Bull Frog R. Catesbiana, Common Giant Toad Bufo Bufo Gargarizans And Northeast Brown Frog R. Dybowskii

In this study, three groups of 30 two-year-old female bull frogs, 30 grown female common giant toads and 30 grown female northeast brown frogs were employed to get the oviduct for investigating oviduct yield, physical characteristics, common nutritional components, total phospholipids, trace elements, amino acids (AA), saccharides and fatty acids. The results were as following.(1)The test of oviduct yield showed that the dried weight of oviduct of brown frog was 1.561±0.239g, which was significantly higher (1.46 and 2.37 times, P<0.01) than that of the toad and bull frog respectively. The index of dried oviduct weight of brown frog to live body weight was significantly higher (3.16 and 24.23 times, P<0.01) than that of the toad and bull frog respectively.(2)The test of physical characters showed that there was some difference among the oviduct of three kinds of frog. The oviduct of brown frog had the identical characters of uniform caliber, transparence, fat luster, creamy feeling, special fat smell and yellow-white in color, which were different from those in common giant toad and bull frog. The oviduct of bull frog was hard a bit in texture, and had a smell of spice. The expansion index of dried oviduct in brown frog was 115.51, which were as high as 4.59 and 8.20 times of that in common giant toad and bull frog respectively.(3)The test of common nutritional components showed that the oviduct of bull frog had the highest content of CP of 68.95%, which was i .43 and 1.46 times as high as that in common giant toad and bull frog. The ash content of oviduct of bull frog was 4.50%, which was 1.38 and 2.16 times as high as that of brown frog and common giant toad respectively. For EE, the oviduct of brown frog and oviduct of bull frog had the content of 13.29% and 12.10%, which were 1.44 and 1.31 times as high as that of the oviduct of common giant toad respectively.(4) The total phospholipids content of oviduct of bull frog was 4.62%, which was 2.00 and 2.98 times as high as that of the brown frog and common giant toad respectively.(5) The test of trace elements showed that the content of Zn in the oviduct of the bull frog was 68.382μg/g, which was 3.27 and 2.83 times as high as that of the brown frog and the giant frog respectively. Cu content of oviduct of bull frog was 16.459μg/g, which was 2.67 and 2.54 times as high as that of brown frog and common giant toad respectively. The content of Mn in the oviduct of bull frog was 62.643μg/g, which was 3.70 and 127.06 times as high as that of the brown frog and common giant toad respectively. The content of Mg in the oviduct of common giant toad was 12385.280μg/g, which was higher than that of the brown frog and bull frog by 23.99% and 76.43% respectively. The oviduct of brown frog had the content of Ca of 73714.06μg/g, which was 5.78 and 3.17 times as high as that of common giant toad and bull frog respectively.(6) The determination of amino acid showed that the contents of total hydrolyzed amino acids were 50.19% in the oviduct of bull frog, 36.28%in the oviduct of brown frog and 31.96% in the oviduct of common giant toad. While, the three samples had the total contents of free amino acids of 7.35%o, 2.97%0 and 1.88%0 respectively. They all contained 9 kinds of EAA.The test of hydrolyzed amino acids showed that the rate of EAA and index of E/N in the oviduct of brown frog, common giant toad and bull frog were 54.47% and 1.20, 52.28% and 1.10, 49.75% and 0.99 respectively. The relative content of hydrolyzed amino acid verified with the sample origination and the kind of amino acid. The total Contents of the nine EAA in the oviduct of bull frog, common giant toad and brown frog were 24.91%, 16.71% and 19.76% respectively.Free amino acid analysis showed that the rate of EAA and E/N in the oviduct of brown frog, the toad and bull frog were 38.83% and 0.63, 34.34% and 0.52, 43.27% and 0.76 respectively.(7) Determination result showed that the content of total saccharides in the oviduct of brown frog was 27.34%, which was 2.47 and 2.05 times as high as that in. And, the content of reducing sugar in the oviduct of common giant toad and bull frog were 0.50% and 0.53% respectively, that were 1.19 and 1.23times as high as it in brown frog. The content of polyose in the oviduct of bull frog and brown frog were 12.81% and 26.91%, that were 1.22 and 2.55 times as high as in common giant toad respectively.(8) Analysis of fatty acids by GC/MS showed that 11 kinds of fatty acids, 7 kinds among which were unsaturated, were found in the oviduct of bull frog and common giant toad. For brown frog, there were 9 kinds of fatty acids, which included the same 7 kinds of unsaturated fatty acids too. The total relative contents of fatty acids in the oviduct of both bull frog and common giant toad were 84.33% and 83.22 % respectively, which were 1.26 and 1.25 times as high as that of brown frog. The total content of unsaturated fatty acids in the oviduct of common giant toad was 60.23% which was 1.22 and 1.05 times as high as those in brown frog and bull frog respectively. The ratio of unsaturated fatty acids in the oviduct of brown frog was 74.16 %, which was 1.02 and 1.09 times as high as that of the toad and bull frog, The total content of EPA, NPA and DHA in the oviduct of brown frog was 11.57%, which was 1.10 and 2.42 times as high as that of common giant toad and bull frog respectively. The ratio of EPA, NPA and DHA in the oviduct of brown frog were 17.34%, which was 1.37 and 3.05 times as high as that in common giant toad and bull frog respectively. The content of EAA in the oviduct of common giant toad was 24.56%, which was 1.98 and 1.59 times as high as that of brown frog and bull frog respectively. And, the ratio of EAA in the oviduct of common giant toad was 29.51%, which was 1.58 and 1.61 times as high as that of brown frog and bull frog respectively.(9) The result of hierarchical cluster analysis with the chemical components determined showed that the oviduct of common giant toad was more assembly to that of the brown frog than bull frog.In conclusion, the oviduct of brown frog, common giant toad and bull frog were rich in nutritional and medicinal components. However, they were obviously different from each other in chemical components analyzed. The prospect of product developing from them, especially from the oviduct of bull frog and common giant toad, were rather bright.
