The experiment was performed "Baiyu" loquat fruits as sample, which study on their post-harvest physiological and biochemical changes and the optimum conditions during storage.This study processes many experiments on different temperature, storage style and antistaling agents.The main idea is to offer theoretical basis for the storage of the loquat fruits in the future.This research on the fruits' post-harvest physiological and biochemical changes shows that low temperature could observably reduce soluble solids, soluble protein, total acid, total sugar, Vitamin C, weight loss, rotting rate and respiratory rate of loquat. Comparing to other different temperatures, 6℃has the best effects on the fresh-keeping of loquat.Under the storage conditions of no chilling injure, the activity of PAL, POD, SOD increased slowly, and the contents of soluble protein dropped slowly with the increase of storage period. The appearance symptom of loquat fruit at 3℃showed that it was difficult to shell, color tend to decrease and pulp became rough. At the same time, the surface of loquat fruit appeared little hollow spot. The chilling injure fruits occurred caused these expressions above.During the loquat post-harvest storage time, the study processes many experiments on different antistaling agents. The result indicated that the concentration of 1.5% Chitosan treatment could observably reduce weight loss rate, keep the content of total sugar, total acid and Vitamin C. It was beneficial to preserve quality. The treatment of 0.10 g/kg 1-MCP could observably reduce weight loss, keep high contents of total acid and sugar, and failed effectively respiratory rate. The different treatments had evident differences. Ozone of 500 mg/h and 0.5 min is the best treatment for the storage of Baiyu loquat.It could reduce observably the rotting rate.Effects of different storage gas composition on total acid, total soluble solids, POD and SOD of Baiyu loquat varieties during storage were studied. The research showed that Controlled atmosphere storage could inhibit the decrease of total soluble solids and acid obviously, and the increase of POD and SOD activity.The optimum gas composition of Baiyu loquat was at 6℃, O24~6%, CO26~8%. After the 35th day of storage under this condition, the contents of total soluble solids and acid showed significant difference compared to comparison..
