Using 30 wheat variety from XinJiang carry through examination, investigate flour yield, grain hardness, protein contest ,wet gluten content, sedimentation value, water absorption, development time, stable time, softness, FQN quality traits. research the different and correlation character, effects of genotype, environment and G×E interaction on quality traits, the results are presented below:1 There are significant differences between locus and quality in winter wheat breed. The aberrance quotiety were little between flour yield, protein contest and water absorption. the development time, stable time, softness and FQN have high aberrance quotiety. The spring wheat's protein contest, wet gluten contest, sedimentation value, development time, stable time, FQN downtrend with altitude's increase, and change with the gap of height above sea level.2 At Glu-B1and Glu-D1, the spring wheat were more enrichment than winter wheat on HMW-GS value, and Glu-A1frequencies of subunits 2* content were hyper than winter wheat in the mass.3 Winter wheat's grain hardness, protein contest, sedimentation value, water absorption were controlled by genotype, development time, stable time were mainly influenced by G×E, while softness, FQN were infected by circumstance. The tank of quality characters influenced by genotype can be listed as follows: sedimentation value, grain hardness, protein contest, water absorption, wet gluten content, flour yield, softness, FQN, stable time, development time. Spring wheat's grain hardness, protein contest, wet gluten content, sedimentation value and water absorption were mainly influenced by genotype, development time, stable time were evidenced effect by genotype, while environment have some influenced to development time and stable time. flour yield, softness, were mainly influenced by environment, have few controlled by genotype. The tank of quality characters influenced by genotype can be listed as follows: water absorption, grain hardness, sedimentation value, protein contest, FQN, wet gluten content, development time, table time, softness, flour yield, descent numerical value. Wheat character breeding in XinJiang, we should choose grain hardness and sedimentation value as early as era4 Correlation analysis indicates that winter wheat are significantly positives correlation between protein contest and wet gluten content, sedimentation value and development time ,sedimentation value and stable time, sedimentation value and FQN, wet gluten content, sedimentation value and HMW-GS value, grain hardness and HMW-GS value. While correlation between sedimentation value and softness, softness and development time, softness and stable time, softness and FQN are all significantly negative. Correlation analysis indicates that spring wheat are significantly positives correlation between grain hardness and protein contest, grain hardness and water absorption, grain hardness and development time, protein contest and wet gluten content, protein contest and water absorption, protein contest and development time, wet gluten content and descent numerical value, descent numerical value and water absorption. There are significantly positives or negative between flour character. While HMW-GS value and flour yield, sedimentation value and softness, softness and development time are all significantly negative.
