Propolis is one of the natural matters with highest total flavones content, but most of the propolis flavones exist in the form of flavone glycoside. Flavone glycosides can' t be absorbed directly by the human body, so the biological value is low, and the antioxidation is obviously lower than that of flavanone. In this paper, the hydrolysis of propolis flavones and the antioxidation of hydrolysate were researched.The flavone glycosides in propolis were hydrolyzed by hydrochloric acid, and the antioxidation of its acidolysis products were determined. The results indicated that the flavone glycosides in propolis could be hydrolyzed into flavone glycones effectively by acid hydrolysis. The rate of hydrolysis conversion of rutin reached 59.1%, and the contents of kaempferol and isorhamnetin were increased by 2-4 times. The scavenging capacities on DPPH radical and antioxidative activities to lard oil of the acidolysis products were improved obviously.By screening, naringinase was utilized to hydrolyze the flavone glycosides in propolis, and the antioxidation of its enzymolysis products were determined. The results indicated that the flavone glycosides in propolis also could be hydrolyzed into flavone glycones effectively by enzymatic hydrolysis. The rate of hydrolysis conversion of rutin reached 44.7%, the contents of flavonoid aglycone myricetin, quercetin and kaempferol were increased by 1.8 %, 30.2% and 39.3% respectively. The scavenging capacities on DPPH radical and antioxidative activities to lard oil of the enzymolysis products were improved.
