This article commented the characteristics of Puna chicory and inulin contained in its roots, introduced the production and application of inulin internal and external, looked into the future of inulin, illustrated physical, chemical and function features of fructose, compared the technology of production, analyzed the necessity and significance of research and development on inulin fructose.At present, people have regarded YangJiang as material to research inulin fructose.While the quantity of inulin in Puna chicory is much more than in YangJiang .We can't have found any report about its productive technology internal. We groped on this aspect and established foundation on use and development of chicory in the future. According to the foundation and actuality of research , combined the specific experiment conditions, this article regarded Puna chicory as raw material, systematically researched the technology condition that sulfuric acid catalyzed inulin to hydrolyze fructose. The major results were shown as follows:Using the method of 3,5-dinitrosalicylic acid is to measure inulin fructose and using the spectrophotometer is to measure absorbance. In this way, the absorbance obtained was stable. The method was exact, reproducible, convenient to operate and speedy. This article researched the time of hydrolysis, the temperature, the concentration of inulin and sulfuric acid, which influence the conversion rate of inulin fructose .We used L9(34) orthogonal experiment and analysis of variance to make the best parameter, test and verify the best technology. The best conditions were: the concentration of inulin was 15%,time was 65 minute, temperature was 65℃,the concentration of sulfuric acid was 3.5%.Under these conditions, the conversion rate of fructose was 91.62%.The advantages of this method were that the raw material came from widely, the facilities were common, the kind of reagent was less, the technology was easy, speedy, low cost and conversion rate was high.
