The article studied growing density,sprout rate' growth,changes of nutrition component of soybean sprouts;illuminating and harvesting condition,and the effects of iodine on green soybean sprouts.In order to provide industrial,better quality and safe green soybean sprouts with theory and practice.The results were as follows:1 The article studied the effects of varieties and growing density on the growth and yield of soybean sprout.Results indicated that the effect of varieties on yield was remarkably,yield and weight of 100 of bean show oppositely correlation.Sprout rate between varietys had no significant difference.Sprout rate was high under big density;the yield rate 5.24 which was highest when density was 3.0kg/m~2.2 The article maked Gaofeng NO.1for the trial materials,assessed appearance of soybean green sprouts which were illuminated and harvested at different time.Results indicated that green soybean sprouts which began illuminating at 7cm,harvested at 12cm sense organ appraisal scores was high.3 The article studied soybean sucked water rate,the contents of amino acid,soluble protein and reducing sugar changes of soybean sprouts when sucked in water for 6h at 25℃. Results indicated that sucked water rate had remarkably correlation with sucking time: y=0.1041x~2+15.701x+6.715(R~2=0.9734).The contents of amino acid,protein and reducing sugar decreased when sucking time decreased.4 The article studied germination and the changes of nutrition component of soybean sprouts which grew for 6d at 25℃.Results showed that the contents of amino acid, protein,reducing sugar were decreased at the anaphase of bean sprouts,and the contents of vitamin C and fiber increased gradually.Content of vitamin C had remarkably correlation with growing time:y=-0.3762x~2+13.185x+3.7135(R~2=0.9985).5 The article studied the sucked water rate,the sprout rate,the yield and the nutritive values changing rules of soybean variety Gaofeng NO.1and Iodine enriching rules when soybean was in the different concentration Iodine solution(0,0.5,1.0,1.5,2,2.5,3, 3.5mg/L) for 6h under 25℃then cultivated for 6days.The results showed that soybean sprouts were cultivated under low concentration Iodine solution grew better,Vitamin C, amino acid and protein content in edible portion increased,and Iodine content in edible portion increased greatly.The effects were best under the concentration of 0.5~1.5mg/L.
