The research used field location experiments and investigation study to compare the effect of organic, specially-grown and conventional cultivation on vegetables yields, quality and soil physical and chemical properties.The results of the comparative experiments of the Organic, the Specially-Grown and the Conventional cultivations were gained.(1) The organic cucumber's yields was the lowest, the conventional was the highest. The Specially-Grown was intervenient. The Organic dropped 13.19% compared to the Conventional, and the Specially-Grown dropped 8.43% compared to the Conventional. But the difference was not certainly remarkable.(2) As to the nitrate content, the Organic cucumber was the lowest, while the Conventional was the highest. Compared to the Conventional, the Organic reduced 54.38% and the Specially-Grown reduced 30.21%.(3) Cucumber's vitamin C and soluble sugar content of the Organic were the highest, while that of the Conventional were the lowest. The Specially-Grown was intervenient. The ANVOA result indicated that the three cultivations were significantly differed (P<0.01). Among them, Vitamin C in organic cucumber was 44.62% higher than specially-grow cucumber, soluble sugar content of the Organic was 6.72 times of conventional. Although it had no significant change in irritable acidity among the three cultivation, the Organic had the highest ratio of sugar to acid, endowing the Organic cucumber with good taste. These indicated that the organic cucumber quality was the best, and the Conventional was the worst.(4) After cultivation, the soil total nitrogen, available nitrogen, total phosphorus, available phosphorus, potassium reduced, except that the soil total nitrogen in the Organic was increased slightly. The difference of the three cultivations in nutrient contents was not significant, but the Organic decreased slightly. These indicated that the Organic cultivation was superior in maintaining of soil fertility.To assess the difference of vegetable quality and soil physical and chemical properties between organic and conventional agricultural practices, several vegetables were sampled from three organic farms, ei. Planck of Lishui County Jiangsu Province ,Yunjiandaziran of Shanghai and Ostone of Chuansha County in Shanghai, in the region of the delta of the Changjiang river of China . The results were following:(1) The nitrate content of organic vegetables was significantly lower than that of conventional vegetables; the nitrate in organic cabbage had reduced 30.12% to the conventional. It showed that the safety of the organic vegetable were higher than the conventional.(2) Vitamin C in organic vegetables were significantly higher than the conventional vegetables; And the organic cabbage's Vitamin C had increased 61.38% compared to the conventional. Soluble sugar contents in organic vegetables were significantly higher than the conventional vegetables, although it had no significant change in intractable acidity; the Organic had the higher ratio of sugar to acid, endowing the Organic cucumber with good taste. The soluble protein in organic vegetables was significantly lower than the conventional.(3) Soil bulk weights in organic soils were lower than conventional soils, although the difference was not remarkable, it can be seen that the soil Permeability and porosity, and other characteristics had been improved after the organic management.(4) Soil pH also had certain change, but this kind of change is bidirectional, in view of the different soil, after the organic cultivation, some ascensions somewhat reduces, has carried on the suitable adjustment originally to the meta-acid leaning alkali soil, which was more advantageous to the vegetables growth.(5) Total nitrogen and available nitrogen content were significantly higher than that of conventional soil. However, total phosphorus, available phosphorus, potassium, organic matter changes had not fully consistent trend.In a word, in the field location experiments, vegetables quality of Organic cultivation were the best, Specially-Grown, Conventional were following. The change in the soil was the same, the Organic cultivation were the best, the Conventional were the worst, the specially were in the middle. In the investigation study, the vegetables quality and soil fertility in organic farms were better than the conventional farms.
