In recent years, as the proportion of meat consumption gradually increased, the quality of beef also receives an unprecedented attention. And the demand for high-grade beef is also improved, identifying the key factors of high-grade beef in the production, establishing a correct and reasonable direction of development, improving the quality of beef is very essential.First, the index of performance-related and forecast of meat production of carcass segmentation meat are studied. The major findings are as follow:The yield of segmentation meat with the production performance: carcass weight, ribeye area and backfat thickness is significantly associated;carcass weight, ribeye area and backfat thickness can be used to predict carcass meat weight, while the carcass weight and ribeye area are the main factors. Based on the relevance of the size, choosing the best traits targeted to enhance the parts of meat production, to improve their predictive accuracy.Second, performance-related and forecast of carcass production rate are studied. The major findings are as follow:The index of production performance:carcass weight, ribeye area with carcass production rate is highly significantly associated (p<0.01), but backfat thickness was significantly correlated(p<0.05);the meat production performance indicators:carcass weight, ribeye area and backfat thickness can be used to predicted the rate of carcass meat production, in which three factors predictiving is accuracy,the forecasting capabilities can be improved.At last, the standards of the carcass in quality and yield is studied. The major findings are as follow:Carcass yield grade is divided into three levels, namely:A, B and C; Quality is divided into five grade 1, namely:super 1+,1,2,3, and endures;Ultimately thel3 representations of Yanbian cattle carcass meat grade is determined, including a substandard level.
