There are abundant nutrients and important biological functions in ripening papaya pulp, current-ly, few studies have been done on whose components, the main nutrients and functional ingredie-nts were analyzed in this thesis for the first time.The main contents were as follows:(1) a ethanol solution extract from ripe papaya fruit pulp was chromatographed on a macrop-orous resin column to yield two major fractions which were eluted by water and 60%-95% ethanol solution, respectively. Fraction eluted by water(CP1) was carbohydrates mainly. The in vivo on mice indicated that CP1 can significantly stimulate the growth of salutary bacteria, whose prom-oting effect with no significant difference compared with chicory inulin(P>0.05).(2) CP1 was subjected to further purification on a DEAE-cellulose column and HW-40 gel column, three compounds(I, II, III) were obtained. By analyses using mass spectrum(MS), nuclear magnetic resonance(NMR)and capillary electrophoresis(CE), three compounds were identified as ethyl-fructoside(I); Fru-β(2→4)-a-Glc(1→4)-β-Glc(II) and Gal-β(1→6)-α-Glc(1→2)-β-Fru(Ⅲ), respectively.(3) Fraction which was eluted by 60%-95% ethanol solution was performed on ODS and MCI column chromatography, three compounds were isolated and their structures were identifi-ed as 2β,3β-Dihydroxy-ursolic acid (V); 3-O-glycoside-sterol(Ⅵ) and diosgenin-3-O-β-D-glucopyranosyl(1→3)-β-D-glucopyranosyl(1→4)-[a-L-rhamnopyranosyl(1→2)]-β-D-glucopyranoside (Ⅶ), respectively.(4) The crude water-soluble polysaccharides from Carica papaya pulp (CPP) was extracted by hot water and precipitated by ethanol, which was measured by phenol-sulfuric acid method and accounted for 2.89% of fresh papaya pulp. CPP was fractionated by DEAE cellulose chromato-graphy, two major fractions, CPP1 and CPP2, were collected, which accounted for 21.03% and 72.23% of CPP, respectively.(5) CPP2 comprised of rhamnose(11.56%), arabinose(7.41%), galactose(14.74%), glucose (8.57%), xylose (0.15%),fructose(0.76%) and galacturonic acid(56.82), which was identified as pectin presumably refering literature. CPP1 was performed on a Sepharose-6B gel column to yield a major fraction, CPP1-1, which was comprised of rhamnose(10.12%), arabinose(11.02%), galactose(23.08%), glucose(28.75%), xylose (24.43%) and fructose(2.61%), the infrared (IR) spectroscopy revealed distinct-absorbance peaks of polysaccharides.
