Wheat germ is a by-product of flour processing and a natural nutrien source. Wheat germ contains rich nutrien.lt has good function of health protection.In the past years,function of health protection of wheat germ was researched,for example promoting growth and development,protecting brain,anti-Atherosclerosis and so on.Objectives: The present studies were conducted to evaluate the function of health protection of wheat germ and functional ingredients that contain flavonoids, octacosanol,glutathione,Vitamin E by animal experiment.lt can provide the scientific themry for developing and utilizing in nutrien, health protection and medicine.Motheds:l.On the basis of establishing model of experimental hy perlipidemia rats,the effect of flavonoids of wheat germ on the serum lipids level in rats,LPO content in serum and tissues,blood SOD activity and GSH-Px activity were investigated.2. Wistar rats were divided randomly into three group, namely, control group, exhaustive exercise group and octacosanol group. After three weeks, rats were forced to swimming to induce exhaustion. MDA content, Ca2+concentration, SOD and GSH-Px activity were measured.3. The mice were fed with the wheat germ of various dose ,after three weeks, made swimming by increasing weight on body of mice. We reserched effect of The Damage of Anti-Free-Radicals on Germ of Wheat in mices by changing on SOD, LPO and Mb in serum.4. The mice were fed with the wheat germ of various dose for six weeks, and we observed effect of the different dose germ of the wheat on blood lacticacid(LAC),BUN,glycogen and LDH in mices so as to raise physical power, endurance and ability of reducing fatigue.Results:l.FEWG(Flavonoids Extration of Wheat Germ) decreased TC(P<0.0l) and TG(P<0.01), and increased HDL-C(P<0.01) significantry.With antioxidation function,FEWG decreased LPO content significantly in serum and tissues(P<0.01), and SOD activity and GSH-Px activity in blood were effectively enhanced(P<0.05).2. It were Showed that octacosanol of wheat germ supplement decreased the lipid peroxidation level(P<0.05), increased SOD and GSH-Px activities(P<0.01, P<0.05) and free calcium concentration significantly in the myocardial mitochondria of rats after exhaustive exercise.3. Compare with NC group, SOD activity in serum increase significantly(P<0.01) LPO and Mb content reduce significantly (P<0.01).4. The Wheat Germ of voarious dose could increase weight of mice significantly(P<0.05), and could lower lactic acid and urea concentration significantly (P<0.05), and could increase activity of lactic dehydrogenase hydrogen (P<0.05), and could significantly increase contents of liver and muscle glycogen (P<.01), and could increase the endurance of movement.Conclusions: FEWG can control blood lipids metabolism, and enhance antioxidation function,it it indicated that FEWG is effective in prevention of hyperlipidemia. Octacosanol of wheat germ could decreased free radicals, and thus protect the damage of myocardial mitochondria from function of the myocardial mitochondria. The germ of wheat possess the ability in resisting free radicals. The results indicate that the germ of wheat can improve physical capacity and reduce fatigue.
