| Backgroud and ObjectiveEsophageal cancer is one of the most common malignant tumors and has an obvious geographical distribution in China. The pathogenesis of esophageal cancer is not very clear right now. There is an area with high esophageal cancer risk in Southern China including Chaoshan region of eastern Guangdong province with a death rate of 30/10~5, Meixian region with a death rate of 20/10~5 and Nan'an region of western Fujian Province with a death rate of 50/10~5. The esophageal cancer death rate of Nan'ao Island in Chaoshan region is up to 101/10~5 but in Shanwei region which is about 60 kilometers away from Nan'ao Island, the rate is 10 per hundred thousand.Many researches indicate that environmental factors especially dietary factors are related to the esophageal cancer. Dietary mode, food and nutrients affect systemically the development of esophageal cancer. By far the dietary information of Chaoshan Area is not very clear. Shantou region and Shanwei region are both in the Chaoshan plain and same to each other in geography, climate, custom and language, but the dietary habits of the two regions are different. Whether it is related to the different esophageal cancer risk is worthful for further study. We choose Jieyang and Shanwei region as areas with high and low esophageal cancer incidence to compare the difference in dietary habit food and nutritents to give some clues to esophageal cancer etiology study. Methods:The dietary survey was carried out based on 3-day Dietary Record in each randomly selected household to build a database from Jieyang and Shanwei region to analyze the dietary factors such as food and nutrients, smoke, alcohol and consumption of tea. The data of food nutrients, smoke and alcohol was divided into 3 groups (teenagers, adults and aged people).
