Acrylamide has been considered as a reproductive ,terafogenic and nervous toxicant.Early in 2002,the Swedish National Food Authority and the University of Stockholm jointly announced a finding of considerable levels of acrylamide in heated,dried starch-based foods.Since then intensive investigations have been launched worldwide to explore the toxicity and potential health risk of this contaminant in human diet.This paper reports antagonistic effect of selenium and vitamine E on acrylamide toxicity by in vitro and in vivo studies.(1)Combined selenium at concentrations from 0.5μmol/L to 10.0μmol/L with vitamine E at concentrations from 2.5mmol/L to 40.0mmol/L and 1.5 mmol/L could reduce the cyctoxicity and mutagenicity in cultured V79 Chinese hamster cells caused by acrylamide,decrease the amount of malondialdehyde(MDA) and increase the activity of superoxide dismutase(SOD) and glutathione peroxidase(GSH-Px).The synergistic effect of Se and vit E was seen at lower doses but not higher doses.(2)Fed 100mg/kgAA group,50mg/kg AA,50mg/kg AA+200μg/kg Se,50mg/kg AA+50mg/kg VitE for five weeks, resulted in an decrease in toxicity of liver ,kidney,hemopoietic system,and mutagenicity and the amount of MDA in the serum of mice caused by acrylamide.(3)The mice fed with frying chips containing 55μg/kg.d AA for 5 weeks, showed no significant changes in liver, kidney and hemopoietic system.
