For the sake of exploiting and improving the value of olive industry in Fujian Province, studies on the effect of olive juice and different components of dialyzed juice on anti-alcohol and liver- protection was made according to the procedure of the functional evaluation. The quality and quantity of functional components about anti-alcohol and liver- protection in olive was analyzed by Saturn-2100.Studies of the effect of olive juice on ectogenesed alcohol dehydrogenase and alcohol liver injury were made out. Results indicated that LPO contents in mise blood serum were reduced while SOD contents in whole blood were increased by olive juice. After 30d's feeding liver injured mise groups with various dose of olive juice, the hepatic lobule structure of Mise with high dose was normal; Hepatic cord radially ranged as the center of navel vein. The cells were polyhedral, monocytic, occasionally dikaryocytes. The karyons were big and round, in the middle of cells. Liver structure of Mise with medium dose and low dose olive juice was basically normal, lightly feculent, tumid, adipose deteropration. This result indicated that certain amount of olive juice was effective on anti-alcohol and liver- protection. Various dose of olive juice had different effects on alcohol dehydrogenase activity. The activation rate was 16.29% for high dose; 15.08% for medium dose; 12.72% for low dose. which demonstrated that alcohol dehydrogenase activity got higher with increasing dose.Studies of effects of different olive juice components on ectogenesed alcohol dehydrogenase and alcohol liver injury were made out through its separation by dialysis package (MD25: molecular weight 5000). The result showed that the activities of LPO, ALT, AST in mise blood serum were obviously reduced while SOD activity in blood and GSH content in hepatic plasm were increased distinctly (P<0.01) through dialysate of olive juice. After 30d's feeding liver injured mise groups with various dose of different olive juice components, mise with undialyzed olive juice, their hepatocytes swelled and putrescenced, cytoplasts became loose. The number of cytoplast was various, many fat vacuoles came into being. Hepatic lobule structure of Mise with dialyzed olive juice was normal. Hepatic cord radially ranged as the center of navel vein. The cells were polyhedral, monocytic. occasionally dikaryocytes. The karyons were big and round, in the middle of cells. These phenomena indicated that dialyzed olive juice could effectively protect liver structure of mise.
