Prunus mume Sieb.et Zucc, belonging to rosaceous prunus, is a kind of special local fruit in our country, which has rich nutrition and health value. The antibacterial activity, the effect on scavenging active oxygen, and the effect on reproducibility dysmnesia in mice were studied. And then the chemical components of the greengage juice were analyzed by GC-MS. Therefore, an important recommendation for developing deep-processing products of Prunus mwne was offered.1.The antibacterial activity of greengage juice was studied. It was showed that greengage juice had a significantly positive inhibitory activity against Staphylococcus aureus, Escherichia coli, and Bacillus subtilis. Meanwhile, greengage juice still had a strong antibacterial effect after heating, and antibacterial effect was not obvious difference after changing pH value. In addition, the MIC for three kinds of bacteria is respectively as follow: Staphylococcus aureus, 40%, Escherichia coli, 70%, Bacillus subtilis, 60%.2.The effect on scavenging·OH and·O2ˉof greengage juice was studied by Fenton reaction and Pyrogallol Autoxidation Method respectively, which was compared with the effect of tea polyphenols. The result showed that greengage juice could effectively scavenge·O2ˉand·OH. Therefore, Prunus mume might be a kind of high qualitive foodstuff that could produce antioxidative functional food.3.According to the procedure of the functional evaluation, the effect of greengage juice on mice dysmnesia was studied by Morris watermaze. The result showed that the difference between 100%-content greengage juice and the model group had statistical signification, and the difference between 100%-content greengage juice and the masculine group had no statistical signification. It indicated that 100%-content greengage juice could effectively improve the learning and memory ability on reproducibiiity dysmnesia mice. The study filled a gap in the national research realm, had an important practical application value, and offered valuable reference to the processing of greengage.4.The chemical compositions of greengage juice were analyzed by GC-MS. The result showed that 15 compounds were identified, including acid and anhydride (63.70%), aldehydes(2.19%), ketones(2.13%), esters(1.41%) and so on. It indicated that 2-Butenedioic acid and furfural might be related to antibacterial activity of greengage juice among major efficacy components.
