Diameter of grape seeds ultrafine-powder is under 25μm, and the cell wall breaking up rate is over 99 %. So grape seeds ultrafine-powder can be absorbed more easily, and protect health more effectively. This study on the Antioxidant Capacity of Ultra-fine Powder of Grape Seeds under Conditions of in vitro DigestionResults were as follows:1 The comminution of grape seeds come to cell wall breaking, the nutriment released more entirely and in favor of absorbing. We use 6 methods which based on different principle mensurate the antoxidant activity of the grape seeds. the ultra-fine powder of grape seeds has strong ability to clear up free radical, deoxidization and anti-lipide oxidation. The result shown: the ultra-fine powder of grape seeds, which has strong antioxidant activity, is nice nature health products2 Different organic solvents have different polarity, they have different solubility of antioxidant substance of the ultra-fine powder of grape seedes. So, the extraction of the antioxidant substance have different contents and kinds, result in different extraction have different antioxidant activity.70% acetone extraction has highest polyphenol content and the ability of deoxidization on Cu(II);100% methanol extraction has highest ability of anti-lipide oxidation and scavenging effect on DPPH; water extraction has highest scavenging effect on .OH; 70% ethanol extraction has highest scavenging effect on ABTS+. But the antioxidant activity of the digestive liquid has remarkable stronger than the organic solvents extraction. This result shown: the antioxidant activity of the digestive liquid may be more reach the really antioxidant activity of the ultra-fine powder of grape seeds .3 In the simulated gastric fluid, the pepsin has a highest activity when the pH value is 1. there is a lack of pepsin, pH value is 1, in favor of the hdrolyzable phenolics and condensed tannins hydrolysised partially. In the simulated intestinal fluid , the erepsin has much contribution of the antioxidant activity of the ultra-fine powder of grape seeds.4 In this research, use dialyzer simulate the absorbability of the small intestine: dialyzing 2h, the content of the polyphenol of the dialysate come to 33% of the the polyphenol of the sample. The antioxidant activity of the dialysate come to the half of the antioxidant activity of the sample by the ABTS, DPPH, CUPRAC methods. This result shown: much of the antioxidant substance can enter into the dialyzer by passive absorption.5 The methods of Folin-Ciocalteu,ABTS,DPPH and CUPRAC have remarkable relativity in their selves in mensurating the antioxidant activity of the ultra-fine powder of the grape seeds.we suggest to choose the methods of Folin-Ciocalteu,CUPRAC to mensurate the antioxidant activity of the ultra-fine powder of the grape seeds from now on .. In this research, we educed that the total polyphenol content of the ultra-fine powder of the grape seeds is 40.37mg/g, the TEAC value of the CUPRAC is 3068μMTEAC/g.
