Vinegar is rich in nutrients and has a unique health effects.Vinegar has long history in medicinal use, but the beauty effectiveness of vinegar was less studied. This thesis reviews the history of medicinal vinegar and research on vinegar function such as anti-oxidation, anti-aging, free radical scavenging, eliminate wrinkles, desalinate chloasma, provide a theoretical basis for developing vinegar halth and beauty products. The main results were shown as follow:The ability of Xiangxi vinegar clear Fenton reaction hydroxyl free radical and DPPH free radical was studied by spectrophotometer. Xiangxi vinegar has a high clearance rate of hydroxyl radical, the clearance rate is higher than 65%. DPPH radical is stable free radical, its absorbance basically unchanged at room temperature for 30 min. The concentration of DPPH free radical and the absorbance was positive linear correlation in the range of 1.0×10-5~1.0×10-4 mol/L. DPPH semi-clearance (IC50) was 0.293g/mL of Xiangxi vinegar. DPPH semi-clearance (IC50) was 0.229g/mL of vinegar A. DPPH semi-clearance (IC50) was 0.821g/mL of vinegar B.Fed different doses of Xiangxi vinegar, vinegar A, vinegar B to mouse thirty days, determine the MDA levels, SOD, GSH-Px activity and calculate GSH-Px/LPO of mouse serum. Set the old group and young group at the same time. Vinegar has a remarkable antioxidant effects on MDA levels in serum decreased, SOD, GSH-Px activity and GSH-Px/LPO increased significantly especially(P<0.05), Xiangxi vinegar had the most significant effect especially(P<0.01). Varieties and doses of vinegar have great effects on anti-oxidation. Compare with the same dose; Xiangxi vinegar were best in high dose (7.2 mL/Kg), middle dose (3.6 mL/Kg) and low dose (0.6 mL/Kg).Compare with the same vinegar:Xiangxi vinegar was best in all dose, compare vinegar A were best in both middle and low dose, compare vinegar B were best in both high and low dose. In addition, three kinds of vinegar could significantly reduce the body weight of mouse.To build chloasma mice model via intramuscular injections of progesterone, fed different doses of Xiangxi vinegar, ompare vinegar A, compare vinegar B thirty days, determine the MDA, NO levels, SOD activity of liver and skin of mouse, produce skin paraffin sections of skin and observe the distribution of melanoma. Vinegar has a remarkable antioxidant effects MDA, NO levels in liver and skin decreased, and SOD activity increased significantly (P<0.05), especially, the Xiangxi vinegar could reduce MDA levels of liver and skin, and NO levels of skin most (P<0.01).The number of mouse skin chloasma was less than progesterone treatment group, chloasma color was also significantly shallow than the progesterone treatment group. Varieties and doses of vinegar have great effects on anti-oxidation and chloasma fading. Compare with the same dose; Xiangxi vinegar were best in both high dose (7.2 mL/Kg) and low dose (0.6 mL/Kg),ompare vinegar A was best in middle dose (3.6 mL/Kg).Compare with different vinegar:Xiangxi vinegar was best in low dose, ompare vinegar A was best in middle dose, compare vinegar B was best in low dose.Fed different doses of Xiangxi vinegar, compare vinegar A, compare vinegar B thirty days to two months old female mouse, determination serum and skin tissue MDA levels, SOD, GSH-Px activity of mouse, product skin crysections of mouse and observe the change of skin dermis structure. Xiangxi vinegar has a clear antioxidant effects, compared with normal group, Xiangxi vinegar could reduce mouse serum and skin tissue MDA levels, increased GSH-Px activity increased serum SOD activity especially significantly (P<0.01).Mouse body weights had significantly lower than normal group after fed vinegar(P<0.05).Mouse skin wrinkles less and Skin Delicate texture than the normal group. The effect of anti oxidation and elimination in high dose (7.2 mL/Kg) of compare vinegar A was batter than Xiangxi vinegar.It could been concluded that Xiangxi vinegar has in vitro antioxidant activity and great ability of anti-oxidation in mouse, Xiangxi vinegar can fade chloasma caused by intramuscular injection of progesterone in mouse and elimination mouse wrinkles significantly.
