Studies on the detection technology and migration of common antioxidants in foods andplastic food packages is very important for assure food safety and safeguard the consumers’health. This paper aims at using microwave-assisted extraction (MAE) to extract antioxidants,then gel permeation chromatography (GPC) and solid phase extraction (SPE) to achieve theeffective separation of antioxidants from oil molecule, and estabilshing new methods for thestudy on the determination and migration of the antioxidants in the foods and plastic foodpackages.Chapter1: The common knowledge of antioxidants was summarized briefly. Besides, thereview on the research of the sample pretreatment technique, the research status of analysismethods and the study on the migration was reviewed.Chapter2: A gel permeation chromatography-solid phase extraction–high performanceliquid chromatograph (GPC–SPE–HPLC) method was developed for the determination ofphenolic antioxidants in oil and fried foods. The sample was extracted on a vortexmixer,cleaned up through gel permeation chromatography (GPC) and follow a solid phaseextraction (SPE),then used for the qualitatively and quantitatively determination by the highperformance liquid chromatograph. The method is of high sensitivity, gooddetermination,low detection limit, and can be used to accurately determine four phenolicantioxidants in oil and fried foodsChapter3: A new method was developed for the determination of the antioxidants contentand migration level in the plastic food packages.The five antioxidants in the plastic foodpackages were detected by microwave-assisted extraction-high performance liquidchromatography (MAE-HPLC),and pecific migration levels of each antioxidant were detectedafter pretreatment with liquid-liquid extraction-high performance liquid chromatography(LLE-HPLC) in the there food simulants(simulant A(distilled water),simulant B(acetic acid at3%(W/V)),simulant C(ethanol at10%(V/V)). The real sample test showed that this methodis accurate and sensitive. It can be used for qualitatively and quantitatively determination ofstudied antioxidants in samples.Chapter4: Study on the migration of antioxidants from plastic food packages into fattyfood simulants. The antioxidants in the plastic food packages were detected with dichloromethane by microwave-assisted extraction-high performance liquid chromatography(MAE-HPLC),and pecific migration levels of each antioxidant in the fat food simulant weredetected with methanol:dichloromethane (1:4,V/V) by solid phase extraction-high performanceliquid chromatography (SPE-HPLC).Study on the influence about the result of migration levelunder the different time, temperature and sample thickness. The method is of high sensitivity,low detection limit. It could be used for the detection and study on the migration ofantioxidants in plastic food packages.
