Rubus chingii Hu, one of rosaceae rubus, had various chemical components andfunctions. Polysaccharide has a large proportion in R,comparing to other chemicalcomponents,but there is a few researches about it recently. Plant polysaccharide wasconsidered to be important in vigorous life and have many biological activities. So, itwas significant to research on R.P., and was chiefly to find an effective way to extractit. For the sake of promoting R., it was essential to make it into food and healthproducts. This article is maily focused on the following sides:Set up the craftwork to withdraw R.P. by using inner ebullition extraction.Studied on the effects of extraction temperature, liquid/solid ratio, time on yield ofR.P., and obtained the best extraction condition. The results showed that, while theextraction temperature, liquid/solid ratio, time was80℃,10:1,10min, the yield of R.P.extract was highest.Prepared the R.cake, and optimized the preparation and flavouring scheme.Studied influences of different carrageen, sugar, modified starch addition on R.cakequality, and confirmed the best addition to be0.12g,8g,0.15g, respectively; theseasoning used were salt, sodium citrate, glucose, and the optimum addition were1g、0.1g、2g, separately.Making the R.cake, and determining the best preparation and flavouring scheme.By comparing the qualities of R. beverage with different proportions of sugar, sodiumcitrate,β-CD, the greatest formula was adding1.5g,4g,0.02g,0.8g of the relatedingredients,respectively.We developed R. tablet by Refering to the craftwork of making tablet. Theviraiates were addition of sugar,β-CD, MS, and they were set as60%,20%,1.0%,separatively, in per R.tablet.
