Eucheuma is an important marine economic crops, most of them are used as the rawmaterials for the production of carrageenan, only a little part is directly consumed as food. Theprocess of carrageenan production will produce a large amount of solid residue, which is seriousimpediment to carrageenan enterprises’ rapid development.The resource-oriented utilization of Eucheuma residue after extraction of carrageenan hasbecome a very pressing problem. In this paper, cellulase enzymatic hydrolysis was studied toextract soluble dietary fiber from the residue, and the best extraction process was accessed. Thephysiological activity of dietary fiber also was studied. And the design of plant was made whichprocessed Eucheuma residue20,000tons every year. The detailed contents and results of thisstudy were as follows:1. The analysis of nutritional ingredient was made. It was indicate that the content of waterwas up to57.52±2.3%in the fresh residue,and in dry residue protein and fat was tiny,which were0.93±0.04%and0.62±0.02%respectively. But ash content of the residue was high for80.89±3.1%,which was identified as the diatomaceous earth.Total carbohydrate content in theresidue was about17.56±0.82%.The problem of superscale heavy metals in residue was existing,which the content of As,Cd, Hg respectively was0.749±0.029mg/kg、0.083±0.003mg/kg、0.845±0.033mg/kg,while the content of Cr and Pb was Pb0.82±0.032mg/kg,0.92±0.037mg/kgrespectively.2. Optimized the soluble dietary fiber extraction process from the residue. In this part, thecellulase enzyme was applied to improve soluble dietary fiber yield.The optimization extractionprocess were optimized by response surface experiment.The results showed that the celluloseenzyme can significantly improve the extraction yield of soluble dietary fiber from the residue. Inthe process of extraction, the optimum extracting temperature was50℃, the optimum pH was5.5,and the SDF yield was significant effected by the liquid ratio and cellulase amount andextracting time. The significant interaction was found between the liquid ratio and enzyme content,enzyme content and extraction time among SDF extraction yield,which was indicated byresponse surface experiment results.The optimum process of SDF extraction were determined tobe:liquid ratio50:1,adding amount of enzyme1.0%,extraction time3h;and the SDF extractionyield was6.47±0.08%that proved by confirmatory experiment.3. The research of antioxidant activity about soluble dietary fiber.In the section,the physical and chemical about the SDF extraction from the residue was analysis,and its antioxidant activitywas determined by several kinds of radical-scavenging assay. The results showed that the contentof water,ash,protein,fat and heavy metals As, Cd, Hg, Cr and Pb all met national standards. Thecapacity of ferric reducing is23.66μmol/mg;In certain concentration range, the hydroxyl freeradical scavenging ability of SDF presented linearly rising trend with the increasing of SDFadding and the highest clearance was reached at the amount of8.58mg/mL. Under laboratoryconditions, the Alkyl radicals and DPPH radical scavenging activity of SDF was relatively lowerthan others.4. The plant processing20000tons Eucheuma residue after carrageenan extraction per yearwas designed. The works about process design, material balance, equipment selection, equipmentlayout, general layout of plant were made in this part. Process Flow chart, workshop layoutdiagram, and the entire factory floor-plan has been draw up. The consumption of water,power,and steam in the workshop were determined by estimating, which respectively were2156.76t,8728.8kWh,501.6t one day, and350kvA transformer system was chose according tothe power load of production workshop. In this project,550tons production of soluble dietaryfiber has been produced every year, annual sales of up to27.95million yuan. Excluding the costof production, construction works depreciation, equipment depreciation cost and maintenancecost, gross profit is4.5598million yuan.
