Dextran bring a lot of trouble to cane sugar production and raw sugar refining process. In foreign sugarcane mills always applicate dextranase to effectively remove dextran from cane juice.In China there have no yet reports about application of dextranase in the practice manufacturing process of sugar cane mills.This paper preliminary studies application of domestic independent R&D dextranase in sugar cane mills. The main research are as follows:(1) In the single factor experiment, the most optimal conditions of dextranase hydro lyze dextran in sugarcane juice was:reation temperature55-60℃、pH5.5-6.0、reaction time at least10min.(2) On the basis of single factor experiments, analysed by Box-Behnken response surface and optimize the best condition of enzymatic hydrolysis:enxyme doses0.05U/mL, pH5.3, and reaction time14.9min,reaction temperature51.4℃.(3) In the simulation of sulfite clarify experiments, adding the dextrannse into mixed juice that conten dextran653~1781mg/kg.0Bx,the△AP of mixed juice and clarified juice was raised to2.52AP, clarified juice’s color value decreased by21.1%, sedimentation rate improved by24.2%, mud juice filtration rate improved76.8%; adding dextranase into the mixed juice of dextran content is250~300mg/kg.0Bx, it could replace25%dosage of sulfur dioxide and15%phosphate.(4) The test results of dextranase application in sulfitation sugar mill indicates that:In the squeezing process,adding the appropriate dose of dextrannase could effectively reduce the dextran of mix juice、clarified juice、 syrup、molasses and white granulated sugar, at the same time, the△AP of mixed juice and clarified juice was increased0.84AP, the turbidity of clarified juice was reduced by19.05%. Purity difference of first massecuite and molasses increased0.98AP,and the molasses’purity decreasing0.93GP, the turbidity and insoluble impurities of white granulated sugar respectively decreased23.3%and30.8%.(5) Application of dextranase in manufacturing of refined sugar mill. Dextranase was added in the process of raw sugar dissolving, the dextran content of each section materials declined significantly, the syrup’s purity of few last of boiling section reduced respectively2.18AP,1.93AP,4.51AP,it indicated that adding dextranase has significant effect to enhance boiling recovery and reduces the loss of sucrose. At the same time, each press-filter’s capacity increased by10.6%.
