Oats is a kind of nutritious food crops, has the very high health care and medical value. This article Wuchuang County oat bran as raw material production, with water as the extraction agent, through single factor and orthogonal experiment (extract pH, extraction time, extraction temperature, feed water ratio) β-glucan extraction and purification optimization craft. The results showed that oat bran β-glucan:is the best extraction technology conditions of extracting temperature75℃, extract pH is10.5, the extraction time was90min,the ratio of material to water1:16. Under the optimum technological conditions of oat bran β-glucan the highest extraction rate can reach5.8%. Through the best purification conditions of oat bran Ν-glucan for:remove the best dosage of starch with high temperature resistance of alpha amylase for2u/mL extract, the reaction time of15min:Using isoelectric point method to remove protein, removal rate can reach39.21%, oat bran p-glucan retention rate of88.9%:Determine the best concentration of ethanol precipitation conditions is65%. Oat bran β-glucan on DPPH free radical, hydroxyl free radical, the removal of the hydrogen peroxide has a certain ability, and has certain inhibition to the lipid peroxidation, and increases with the increase of concentration. When the sample concentration of1mg/mL, the clearance and the inhibition rate of52.5%,42.36%,52.36%and42.36%respectively.
