This paper selects three brands of full cream goat milk powder produced in Shanxi province, and three brands of full cream milk powder in Inner Mongolia as the object of study. To determine and analyze the physical indicators(sensory、evaluation、solubility、density),nutrition index (moisture、 ash、protein、fat、lactose、calcium、phosphate),and fatty acid composition and relative content,and to compare difference between different brands of full cream milk powder.The result show that,Compared with full cream milk powder, the full cream goat milk powder have weak color, and taste slightly special smell with goat milk.The analysis of variance shows that the protein and ash content of full cream goat milk is significantly higher than full cream milk powder,there’s no significant difference in fat,and Calcium and phosphate content in full cream goat milk powder is significantly higher than full cream milk powder.Average value of protein‘fat、ash、lactose、calcium、and phosphorus in full cream goat milk powder are25.31%、24.47%、7.09%、34.73%、92.1mg/100g、203.6mg/100g.Moisture, protein and fat content of S1brand product of full cream goat milk powder is less than S2brand,S3brand products.Phosphorus content of S2brand is the highest.Calcium、ash、lactose content in S3brand product are higher than the other two brand of full cream goat milk powder.Different brands of full cream milk fatty acid composition analysis shows that Palmitic acid (C16:0) is the highest levels of fatty acid in the full cream milk powder (goat milk powder、cow milk powder).Theoctanoic acid、decanoic acid and lauric acid relative content in full cream goat milk powder is significantly higher than full cream milk powder (P<0.01), SFA/PSFA values of full cream goat milk powder are both higher than full cream milk powder values.Short chain fatty acids in full cream goat milk powder(C4-C12) is17.50±1.18%relative content, full cream goat milk powder short chain fatty acid content is significantly higher than full cream milk powder (8.75±1.31%)(P<0.01).S1brand of full cream goat milk powder short (C4-C12)chain fatty acids content is the largest.
