Thick-skinned melon is a kind of important agricultural product in Northwest China, which has high yield, extensive planting area and important significance of improving farmers’ income. In the transportation and sale process of the thick-skinned melon, the melon peel is largely abandoned, resulting in a waste of resources and environmental pollution. In order to enhance the products’ added value and reduce the waste, the test is focus on the extraction of pectin from thick-skinned melon’s peel, using the acid process and microwave-assited process, and also optimized the process technology. The result indicated that,Acid extraction of thick-skinned melon peel in the three group the highesthardness of pectin in three hardness group the highest pectin yield is2.63%, the extraction process for the extraction temperature80degrees Celsius, extraction time60minutes, solid-liquid ratio was1:25,the pH value is2. In melon; three hardness group the highest pectin yield is4.24%by microwave assistant extraction, extraction process forsolid-liquid ratio was1:20, microwave time6min, pH was2, microwave power400W; microwave assisted method is1.61times to obtain yield pectic acid extraction, and the extraction time was shortened greatly.
