Research On Bean Dregs Dietary Fiber Noodles And Its Hypoglycemic Function

Detary fiber which is known as the seventh class of human beings plays an importantrole in food nutrition and clinical medicine and also is one of the focus of nutritional researchat home and abroad,.Soy bean dregs is a by-product in the production of bean curd, soya-beanmilk fermented bean curd and other products and the content of dietary fiber is as high as50%. So it is an ideal source of dietary fiber. In this study soy bean dregs was used as testmaterial and enzymatic hydrolysis was used to optimize the enzymatic extraction of watersoluble dietary fiber from soybean dregs. On this basis, in vitro antioxidant activity ofsoybean dregs dietary fiber and its fall blood sugar function was studied and the technologyparameters of the bean dregs fiber noodles were determined. The main results are as follows:(1) The best extraction conditions for water-soluble dietary fiber from bean dregs wasobtained with cellulase:enzyme dose4.11%,hydrolysis time2h, temperature50℃and pH8.On this condition,The extraction rate of water soluble dietary fiber is as high as12.37%.Thewater-holding capacity and expansion force of the obtained in-soluble dietary fiber are7.73g/g and4.68mL/g, respectively.(2) Through the in vitro antioxidant we found that:Soybean dregs dietary fiber has astrong scavenging capacity against hydroxyl, superoxide anion free radicals with an EC50ofrespectively4.18mg/mL and8.86mg/mL, but the scavenging capacity against DPPH freeradicals and the total antioxidant capacity are weaker. The scavenging capacity againsthydroxyl, superoxide anion and the DPPH free radicals is weaker than that of VC. However,compared with VC, soybean dregs dietary fiber has a stronger total antioxidant capacity.(3) We found that soybean dregs dietary fiber can not only fall blood sugar, but also candelay the complications by mice test: To a certain extent, Soybean dregs dietary fiber caninhibit the rise of postprandial blood sugar and increase the activity of SOD and reduce theactivity of LDH in serum and liver.At the same time it can raise the content of MDA in serumand liver and protect the heart and liver effectively.So soybean dregs dietary fiber has a goodfall blood sugar effect.(4) The best technology of soybean dregs fiber noodles formula was obtained:Thenoodles made with dietary fiber from soybean dregs have good quality by adding9%dietaryfiber from soybean dregs of150meshfineness,0.25%sodium alginate,and59%water intoflour.
