Based on5kinds of dumpling flour and11kinds of commodity wheat as experimentalmaterials, the protein quality, starch quality and textural characteristics were analyzed, besidessamples from different milling points in Shandong laiyang wheat flour were selected to detectthe freeze-thaw stability, which summarized9better points of the flour milling road, andmixing flour were improved by additives. The main conclusions are as follows:(1)The properties of quick-frozen dumpling flour should reach Indexes as follows:contet of protein12%, damaged starch less than24%, low content of ash, good whiteness,low activity of α-amylase dianfenmei and Polyphenol oxidase, the falling value higher than200s, the extension resistance2.5, the toughness of dumpling cortial204~300s, theextensibility of dumpling cortial27.47~36.75s. The emulsifier and grain protein powder had agood improvement in properties of quick-frozen dumping flour. Adding0.4%,0.2%and2.5%in quick-frozen dumping flour could improve quick-frozen dumping’s toughnes extensibilityand the sense scores. Quick-frozen dumpling flour was suitable for Scale Production andquick-frozen food producing(2)Based on the comprehensive analysis of the index of11kinds of commodity grainin Shandong laiyang Flour Mill,5samples could be used as dumpling flour:Namely FengGezhuang Ma Lan wheat, Muyudian wheat, wheat, Pingdu daze mountain,Feng GezhuangLiangSuo wheat, Pingdu wheat.(3) Among41points of the flour milling road tolerance of freeze-thaw stability,9pointsof the flour milling road could tolerate freeze-thaw more than once, and7points of them were:Namely2Mc下,3M1上,4M上,1M上,1M下,4M下,II5M,including Breaking and Tail milling, whichindicated that Media system was more suitable to be foundation of quick-frozen dumplingflour. Flour yeild of the9points of the flour milling road’s was19.26%of toatal flour yeild.Based on this project,Quick-frozen dumpling flour was suitable for Scale Production andquick-frozen food producing Tiantainles dumpling flour was suitable for family andcanyinhangye to make dumplings; tiantianle normal shuijiaofen was suitable for Machining.
