Epigallocatechin gallate (EGCG) is the monomer of catechin which is separated from tea,and account for40%~50%in total catechins from tea. EGCG has an excellent biologicalactivity, including anti-oxidation, anti-atherosclerotic, anti-radiation, anti-caries dental care,anti-ulcer, anti-allergic, antibacterial, anti-viral, anti-tumor and so on. The poor lipophilicityand low bioavailability of EGCG limit the application in pharmaceutical, cosmetic and foodindustry. Therefore, the research of EGCG modification is very necessary and urgent.This paper studies the preparation of EGCG liposomes and effect of EGCG liposomesoxidation stability in sunflower oil. This research preparates EGCG liposome by ethanolinjection and freeze-drying,which is based on the encapsulation efficiency and the method ofresponse surface analysis (RSM) to optimize the preparation process of EGCG liposome.Andstudying the effect of EGCG liposomes oxidation stability in sunflower oil. Research contentsand results are as follows:(1) It identified the method of EGCG liposome preparation, the ethanol injection and freezedrying method.(2)The optimal EGCG liposome preparation conditions is that the EGCG concentration is10.18mg/ml, CH:SPC is19:100, GTCC:SPC is4:100and the dosage of ethanol is5.32mL.Under this condition, the theory of EGCG liposome encapsulation rate was78.04%.(3)Freeze drying conditions was the best pre freezing temperature of-40℃, pre freezingtime is12h, the drying time is36h; orthogonal optimization of the freeze-drying protectiveagent formula is that sucrose concentration was4%,the concentration of mannitol is2%,glucose concentration is2.5%.(4)Evaluating the antioxidant effect in sunflower oils by oxidation stability index, resultsshows that200ppm EGCG liposomes could make the same effect of100ppm TBHQ insunflower oil.
