Lead, cadmium, chromium, copper and iron are important indicators of food quality and safety, andtheir residual or exceeded serious damage human health. In recent years, metal or heavy metals havebeen detected now and then in vegetable oil materials and oil,which is food or food materials dailyconsumed, causing panic consumers.While executing monitoring tasks on vegetable oil materials and oil metal indicators in Beijingmarket delegated by Food and Drug Administration of Beijing, in order to scientifically assess andanalyze residual of important metals in vegetable materials and oil, considered the high fat content ofvegetable oil materials and oil, this study optimized sample preparation conditions, determined theinstrument conditions of lead, cadmium, chromium, copper, iron detection by graphite furnace methodand inductively coupled plasma mass spectrometry. The results show that: the recoveries of high,medium and low level were between85%-105%, coefficients of variation were less than3.0%,accuracy and precision are good. Because the difference between the method detection limit is large,works should choose the appropriate test methods based on the purpose of the actual work and the need.This study established the rapid test methods of direct determination plant oil material with0.5%OP and vegetable oil with acetone. And in2012the test results of copper content in olive oil has wellcompared with the Dutch testing organizations.2013using US conostan’s lead and cadmium standardvegetable oil as an unknown substance, using direct injection methods for testing, recoveries were90%-110%.In this study, we get227samples of soybean, peanut, sesame sold in Beijing market for threeconsecutive years,666samples of soybean oil, peanut oil, sesame oil, canola oil and linseed oil,detected lead residues of vegetable oil material by graphite furnace atomic absorptionspectrophotometer using a wet digestion and detected the lead content in vegetable oil and the copperand iron contents in olive oil by graphite furnace atomic absorption spectrophotometer using a drydigestion. In this paper, pollution factor evaluation method and health risk assessment method have beenused on the analysis to the monitoring results of lead in vegetable oil material, copper, iron and lead invegetable oils in Beijing market of three years, the results show that the status of sesame oil andrapeseed oil residues of lead is worthy of attention, the exceeded of copper and iron in olive oil haseased.
