Small yellow croaker, oryzias curvinotus and trichiurus haumela are important marine migratory fishes, which occupy an important position in China’s fishery trade. However, as flesh of marine fish is succulent, rich in protein, it is highly perishable, especially the high fat content of trichiurus haumela, under the action of endogenous and microbial source of protein, large amount of biogenic amines is produced through free amino acid decarboxylation reaction. Excessive aquatic products of biogenic amines may cause lower food quality, seriously hamper trade and further processing and utilization of them. This paper analyzed the material characteristics of three species of marine fish and studied the changes of biogenic amines in these three species of marine fish under different storage temperatures. Through the correlation between freshness index and biogenic amines, we determined the characteristics of biogenic amines in these three species of marine fish. And on the basis of analyzing specific putrefying bacteria of small yellow croaker, we explored the inhibitory effect of the biological antimicrobial agents on biogenic amines, this may provide evidence of food safety and the control of histamine for mackerel. The main results are as follows:(1) Firstly, this paper introduced a measurement methods of with ultra-high performance liquid chromatography (UPLC)-post-column derivatization-UV detection. Biogenic aminesin aquatic products meat organization is extracted with trichloroacetate acid, derivived with Dan sulfo-chloride The results:8biogenic amines has a good linear relationship in0.5-30mg/kg, related coefficient (r) is greater than0.998.Furthermore these BAs can be separated from each other within16min.(2) Secondly, A pre-produce method was established. The optimal combination of ultrasonic extraction determined by orthogonal test is:TCA solution concentration12%, ultrasonic power60W, ultrasound at50℃for25min, and extracted2times. And alidation tests show that the pretreatment method for the determination of biogenic amines influence the results significantly (P<0.05).(3)Thirdly, this paper analyzed the material characteristics and putrefying bacteria of these three marine fish. The feedstock of crude protein, crude fat, moisture and ash content in small yellow croaker was3.5%,17.1%and1.1%, respectively. The feedstock of crude protein, crude fat, moisture and ash content in oryzias curvinotus was16.7%,8.5%,69.3%and0.89%, respectively. The feedstock of crude protein, crude fat, moisture and ash content in trichiurus haumela was18.1%,4.5%,76.3%and0.99%, respectively. The results of freshness indicators of raw materials in these three kinds of fish such as chemical, sensory, microbiological test showed the freshness of mackerel was high. Enterobacteriaceae bacteria and Vibrio in three raw materials were not detected.(4) Finally, this paper analyzed the changes of biogenic amines at0℃、-20℃、25℃and freshness through relative indicators such as TVBN, TVC in these three kinds of marine fish. The shelf life of small yellow croaker at0℃,25℃is8d and1d, respectively. The shelf life of trichiurus haumela at0℃,25℃is10d and Id, respectively. The shelf life of oryzias curvinotus at0℃、25℃is12d and Id, respectively. Through the correlation of8types of biogenic amines and freshness variation, we concluded that the characteristic biogenic amines in small yellow croaker were putrescine cadaverine, tyramine, and histamine, the characteristic biogenic amines in oryzias curvinotus were putrescine, cadaverine, tyramine, histamine, and the characteristic biogenic amines in trichiurus haumela were putrescine, cadaverine, tyramine, histamine.
