Starch is the most abundant storage polysaccharide on the earth,which has the advantages of awealth of sources and a wide range of applications. The main direction of starch manufacture andresearch is processing starch, improving application performance, enhancing the value of starch. In thispaper, a combination of irradiation and moisture-heat treatment is utilized to enhance the content of theslowly digestible starch. The changes of surface morphology of maize starch granular are observed atscanning electron microscope and polarizing microscope after irradiation and moisture-heat treatment.The slowly digestible starch is increased by irradiation and moisture-heat treatment in the maize starch.The irradiation of maize starch utilizes3kGy、6kGy、9kGy、12kGy and20kGy in this paper. Theslowly digestible starch content is measured after irradiation. The slowly digestible starch contentreaches the highest-level at3kGy irradiation dose, which is51.23%. The maize starch is dealed bymoisture-heat treatment after3kGy irradiation. The optimum condition of1hour, the concentration of35%, the tempreture of90℃had been determined by single factor experiment of time, concentration,tempreture and orthogonal experiment. The slowly digestible starch content reaches72.18%. Thechanges of pasting profile of native starch, irradiated maize starch and moisture-heat treatment maizestarch have been searched. The changes of surface morphology of maize starch granular are observed atscanning electron microscope and polarizing microscope. The surface of maize starch cracks andpolarzie cross fade away as the slowly digestible starch content raises.
