Penaeus vannamei is one of the largest cultured species of shrimp amount of world,which was introduced in1992. The shrimps were welcomed by consumers because of itshigh nutritive value, special flavor, storage stability and portability. The disadvantages ofthe traditional methods restricted the development of shrimp drying industry. Theexperiments were carried out with the purpose to improve the drying skills of Penaeusvannameis, this experiment was carried out. The results showed that:1The hot-air drying paramenters including temperature, air flow velocity and ladingcapacity had influenced on the drying rate. Temperature had effect on the textureparameters and color parameters, but the influence by air flow velocity and lading capacitywere little. Temperature and air flow velocity had significant effect on dry shrinkage andrehydration ratio, but lading capacity was small. The influence of temperature and ladingcapacity on the drying energy consumption were significantly, the influence of air flowvelocity was not. Raise the temperature or air flow velocity can shorten the drying time,but also affected the quality of dry products. Lading capacity also had the effect on dryingrate and drying energy consumption. Therefore, considering all factors, select theappropriate drying paramenters would increase the drying efficiency and reduce the costwith good quality drying products.2Useing orthogonal test to ascertain the main drying paramenters of electric heatinghot-air drying on Penaeus vannameis. This experiment was carried out to establish therelationship between drying temperature, air flow velocity, lading capacity and drying timeor drying energy consumption. According to the results, the optimum conditions: dryingtemperature is55℃, air flow velocity is4m/s, lading capacity is2250g.3Solar drying on Penaeus vannameis can’t be completed in a day without auxiliaryheating. Open the auxiliary heater can shorten the drying time, but increase the dryingenergy consumption. According to the results, open the auxiliary heater when temperaturefalls was the optimum condition.4In this paper,studied the influnces of three different drying methods on dryingcurve, water activity, shrinkage rate, rehydration rate and general nutrients. Hot-air dryingand solar drying drying rate were faster than traditional natural air drying, the drying timewere shorter than traditional natural air drying. Qulity of hot-air drying and solar dryingproduct were better than traditional natural air drying. But, traditional natural air drying drying enegy consumption was lowest.
