Chondroitin Sulfate is derived from animal cartilage which is an important class of acidicmucopolysaccharide--glycosaminoglycan. The material has high practical and scientific research value andgood market prospects, while because of the raw material and process selection and production conditions,industry status is not ideal. Considering the content of cartilage in vivo sturgeon is high and the chondroitinsulfate with new activity, with farmed sturgeon cartilage as raw material, not only solved the problem ofraw material source, but also solves the problem of the sale of farmed sturgeon, promote the formation ofterminal industry chain.This study used farmed sturgeon cartilage as raw material, selection two kinds of process: dilute alkalienzyme degradation and two enzyme degradation, influence factors on the product yield, purity of thesingle factor experiment, and on this basis, through the orthogonal experiment to determine the optimalconditions. To evaluate the quality of the products by detecting the content of fat, protein and chondroitinsulfate. Through the comparison of two kinds of process get the optimum process. The best conditions ofdilute alkali enzyme degradation method: alkali concentration:60g/L, reaction time:3.5h, reactiontemperature:40℃, solid-liquid ratio was l:6(w/v); pancreatin dosage:0.2%, pH8, reaction time:2h, papaindosage:0.2%, pH6.5, reaction time:2h; alcohol precipitation concentration system:75%. Among them, theprotein content is1.48%, fat content is0.5%, chondroitin sulfate content is48.57%. The best condition oftwo enzyme degradation method: solid-liquid ratio was1:4(w/v), alkaline protease dosage:0.2%, pH11,50℃, reaction time:3h; papain dosage:0.2%, pH6.5,50℃, reaction time:3h; alcohol precipitationconcentration system:75%. Among them, the protein content is0.49%, fat content is0%, chondroitinsulfate content is64.1%. Through the comparison of product quality, the two enzyme degradation processbetter.
