Because of the package of hemicellulose and lignin, the cellulose in hazelnut shell cannot be used directly. At present, white rot fungi has been found to be the most lignin degradation filamentous fungi. In order to obtain cellulose through degradation of lignin, exploring the degradation rules of white rot fungi to hazelnut shell is very important. Meanwhile, hazelnut shell possesses rich natural brown pigment, the studies of its extraction method and conditions provid valuable references for effective utilization of hazelnut shell. Therefore, it has a great significance to explore degradation rules of hazelnut shell by white rot fungi and research brown pigment in hazelnut shell.In the paper, the degradation rules of white rot fungus to hazelnut shell were explored preliminarily, through the determination of acid insoluble lignin and cellulose content and related enzyme activity in different periods of two strains of white rot fungus (Phanerochaete chrysosporium,5.776and Fomes lignosus,5.132) respectively. And the best extraction conditions of brown pigment in hazelnut shell and its antioxidant activity and antibacterial property were studied.Compared with the growth curve, the acid insoluble lignin, cellulose content, laccase, manganese peroxidase and cellulose enzyme in the degradation process of white rot fungus Phanerochaete chrysosporium and Fomes lignosus, the changing rules were found that Fomes lignosus in hazelnut shell medium20d to degradation acid insoluble lignin is better than Phanerochaete chrysosporium.Water extraction conditions of brown pigment in hazelnut shell were optimized by orthogonal method. The optimal combination was that extracting time140min, extraction temperature95℃, solid-to-liquid ratio1:30. The maximum absorption wavelength was280nm. The valeur of brown pigment is73.22. The extraction effect was3.54times than before.The antioxidant activity results by Fenton method show that clearance rate of hydroxyl radical (·OH) of brown pigment in hazelnut shell is99.13%, when the concentration is1.0 mg/mL. The result by thiobarbituric acid (TBA) method of the ability to brown pigment in hazelnut shell resist the liposome peroxidation was reached about20%ascorbic acid. Antibacterial property test of brown pigment in hazelnut shell show that it possesses antibacterial activity to Staphylococcus aureus. Its minimum inhibition concentration (MIC) is0.05g/mL.
