In this thesis, the influences of different ultrasonic combined on the concentration, extraction rate of the turmeric colourant are researched. By Single-Factor experiment the impacts of various factors such as leaching temperature, liquid/solid ratio, ultrasonic frequency, ultrasonic intensity are studied firstly, to study further, DPS is used to have uniform designed. The concentration and extraction rate achieved through uniform designed of different ultrasonic combined units are compared, such as non-ultrasonic assisted leaching, Single-frequency ultrasonic leaching, dual-frequency compound ultrasonic leaching, dual-frequency alternate ultrasonic leaching, Tri-frequency compound ultrasonic leaching and Tri-frequency alternate ultrasonic leaching. The test data was processed with PLS(partial least squares) procedure for extraction rate and concentration, then confirming mathematical model and optimizing process condition. The research will provide reference value for curumin's industrial production.The result showed that the optimal extraction concentration of single-frequency ultrasonic is the largest of all the units, and the optimal extraction rate of tri-frequency ultrasonic is better than any other unit. In non-ultrasonic leaching unit, when the temperature is 50℃, the concentration of solvent is 85%, the liquid/solid ratio is 20, the round rate of the twist is 2.83r·min-1, the adding speed of turmeric is 100g·10min-1 extraction concentration of turmeric colourant concentration reach to the highest 0.233mg·mL-1, when the adding speed of turmeric moves to 70g·10min-1, the extraction rate reach to the highest 58.0%; in single-frequency ultrasonic leaching unit, when the temperature is 60℃, the concentration of solvent is 40%, the liquid/solid ratio is 15, the frequency is 25kHz, the intensity is 600W, the round rate of the twist is 2.83r·min-1, the adding speed of turmeric is 40g·10min-1, the concentration and extraction rate of the turmeric colourant reach to the highest of 0.322mg·mL-1 and 54.5% respectively; in dual-frequency complex ultrasonic leaching unit, when the temperature is 60℃, the concentration of solvent is 40%, the liquid/solid ratio is 15, the frequency is 25kHz+50kHz, the intensity is 400W, the round rate of the twist is 2.83 r·min-1, the adding speed of turmeric is 40g·10min-1, the concentration and extraction rate of turmeric colourant reach to the highest of 0.302mg·mL-1, when the concentration of solvent moves to 50%, the extraction rate reach to the highest of 51.3; in dual-frequency alternate ultrasonic leaching unit, when the temperature is 60℃, the concentration of solvent is 40%, the liquid/solid ratio is 15, the frequency is 25kHz+50kHz, the intensity is 400W, the round rate of the twist is 2.83r·min-1, the adding speed of turmeric is 40g·10min-1,the concentration and extraction rate of turmeric colourant concentration reach to the highest of 0.291mg·mL-1, when the concentration of solvent moves to 50%, the extraction rate reach to the highest of 45.0%; in Tri-frequency compound ultrasonic leaching unit, when the temperature is 60℃, the concentration of solvent is 90%, the liquid/solid ratio is 20, the frequency is 25kHz+50kHz+90kHz, the intensity is 2400W, the round rate of the twist is 2.39r·min-1, the adding speed of turmeric is 40g·10min-1, the concentration and extraction rate of turmeric colourant reach to the highest of 0.288mg·mL-1 and 81.8% respectively; in Tri-frequency alternate ultrasonic leaching unit, when the temperature is 60℃, the concentration of solvent is 90%, the liquid/solid ratio is 20, the frequency is 25kHz+50kHz+90kHz, the intensity is 800W, the round rate of the twist is 2.39r·min-1, the adding speed of turmeric is 40g·10min-1, the concentration and extraction rate of total concentration reach to the highest of 0.277mg·mL-1 and 78.6% respectively.
