RF heating thawing is a new method to thaw frozen food. Due to the dielectric properties of food, the food is heated in the RF cavity. Compared with other ways of thawing, RF heating thawing has high speed, uniform heating, and little effect on food quality. And it is easy to control. But the problem of RF heating thawing is poor heating uniformity. It is easy overheated in the corner of the food. So we need to study the mechanism of RF heating and temperature distribution within the food.We can study the internal temperature distribution of the food through the experimental method, but it is time-consuming, laborious and difficult. So we proposed RF-thermal coupling model, solving the model by using COMSOL finite element analysis software. The model can be used to target the design of the RF heating and high-frequency electronic systems. It have importantly practical significance both for industrial production and scientific research, such simulation and analysis methods have a wide range of applications and development prospects in microwave heating technology and other related fields. The content of this article mainly includes following three aspects:First, measure the dielectric properties of food through the experimental, and analyze the influence of different parameters on dielectric properties of foods. Secondly, establish the RF-thermal model by combining the electromagnetic theory and the heat transfer theory and solve the model by using COMSOL finite element analysis software.Finally, we analyzed the different parameters on the steady-state temperature by changing the relevant parameters. Then we can optimize the RF heating defrosting system.
