Punicic acid is an active molecule which contains many outstanding functions, such as anti-carcinogenic, anti-diabetes, anti-hyperlipidemia, anti-obesity and anti-atherosclerotic properties. Lutein is one of natural carotenoid pigment and it can protect vision, eliminate free radical. However, as new types of nutrients, the punicic acid and lutein have the same problems, such as the poor oxidation stability, low bioavailability and active mechanism are unknown.This paper mainly synthesized several punicic acid delivery carriers to load of hydrophobic drug lutein. And we also preliminary evaluated the load rate, stability and anti-bacterial property of the carriers.In the first chapter of this paper, we simply described the structure, nutrition function, oxidation stability and reactive mechanism of punicic acid and lutein. Then we pointed some outstanding problems about punicic acid and lutein that exist in the study. Next, we focused on several popular kinds of nutrient transport carrier, and their synthesis methods and advantages. The paper also pointed out the advantages of using nutrients transport carrier to load nutrient, and their related research situation. Finally, we accordingly put forward the research point and innovative of this paper.In the second chapter, we synthesized the monoglycerides of punicic acid, and on this basis to build the niosome The results show that monoglycerides of punicic acid can be assembled into niosome of vesicle structure in the water, and the oxidation stability has a greatly improve. However, It cannot package lutein well.In the third chapter, we mainly prepared punicic acid- lutein compound liposome, lecithin and cholesterol as the auxiliary materials. The size of liposome is about 30nm~50nm, and the shape is like a hollow circular vesicle. The encapsulation rate are about 16.34% and 2.23%. Oxidation stability test results show that the punicic acid and lutein in the liposome have higher oxidation stability. Anti-bacterial experiment reveals that the product can inhibit the growth of Colibacillus.In the fourth chapter, we prepared the punicic acid-PEG ester. TEM result shows that the size of the product is about 110 nm, and it is the shape of approximate circle. This kind of nosisome can load lutein well, and the highest entrapment rate can be 16.5%. Oxidation stability test results show that the punicic acid and lutein in the niosome have higher oxidation stability. And anti-bacterial experiments show that the product can inhibit the growth of Colibacillus.In the fifth chapter of this paper, we synthesized punicic acid esterified soluble starch, and constructed of the SLN. TEM shows that their sizes are respectively about 40~170nm, and it is the solid sphere shape. This kind of SLN can hardly load lutein, and the entrapment rate is about 0.64%. Although the oxidation stability is enhanced, the product can hardly inhibit the growth of Colibacillus.
