Conjugated linolenic acid(CLnA,)and Parinaric acid(PnA,)as new types of nutrients have excellent physiological activity,which can fight against cancer,reduce sugar,blood pressure,blood lipid,control atherosclerosis porridge and lose weight etc.Both of them have good research prospects at present.Because CLnA and PnA have three conjugated double bonds and four conjugated double bonds respectively,their stability in the air is extremely poor.And both are fat-soluble substances with low solubility in water.The above reasons lead to low bioavailability of CLnA and PnA,which limits related research and applications.In order to solve the above problems,the key is to build an appropriate nutrient transport system to improve the water solubility and stability of CLnA and PnA,and thus improve the bioavailability of both.Due to the restrictions and requirements of nutrition and food science,in this paper,zein,bovine serum albumin,ovalbumin,hydrolyzed milk protein,collagen and silk fibroin are used as hydrophilic group providers to modify CLnA and PnA,and built several CLnA and PnA based nutrition transport system and load the fat-soluble lutein.Specifically,in this paper,We first loaded CLnA and PnA with the above six proteins.The results showed that these protein delivery systems had effective encapsulation and drug loading for CLnA and PnA,stable release in simulated intestinal fluid,and improved the CLnA and PnA oxidation stability,good dispersion and morphology in the aqueous solution were capsule bubbly,and had bacteriostatic properties of free CLnA and PnA.Secondly,in this paper,fatty acids in phospholipids from egg yolk were converted into CLnA or PnA by lipase synthesis method to obtain functional phospholipid materials with CLnA or PnA activity.The oxidation stability of these two substituted egg yolk phospholipids had been greatly improved,and they had similar fluorescence characteristics as CLnA and PnA.Liposome with vesicular structure can also be prepared by mixing with cholesterol and other substituted phospholipids,with good dispersion and good oxidation stability.Finally,we obtained a novel protein carrier material with both fluorescent and bacteriostatic activities by DCC catalytic condensation.Moreover,proteins modified by fatty acids could self-assemble into nanoparticles in water,which could load and release xanthophyll molecules.In conclusion,the research in this paper had great significance for improving the stability and bioavailability of CLnA and PnA.
