| This research is a part of “key technology research and industrialization of cornspecial formula oil production†in Jilin, one of the core technical projects of “doubletenth engineeringâ€. This paper mainly uses comparative analysis by taking wheyprotein, whey protein isolate, soy protein isolate, peanut protein, maltodextrin,chitosan as wall material, folate as core material, to obtain the most optimalembedding wall material, and screening of different emulsifiers as well as oilformulas to prepare blend oil with high level of folate.1.In order to obtain the most optimal wall material of folate, this research firstlyoptimized different combinations of whey protein, whey protein isolate, soy proteinisolate, peanut protein, maltodextrin, chitosan. The result shows that the combinationof whey protein and maltodextrin is the most optimal wall material at265nm and theembedding rate reached43.13±0.12per cent, which is the biggest folate absorptionpeak. By doing so, the stability and the embedding rate of folate microcapsuleemulsion could reach100per cent and43.53±0.21per cent respectively.Simultaneously, this paper also determined the particle size, viscosity, emulsionstability, embedding rate, acid value, and structure of folate microcapsule.2.In order to optimize the preparation process of folate microcapsule, thisresearch also optimized the ratio of wall material, ratio of solids content, and the ratioof oil and water, at1.325:1,15.71±0.38per cent, and13.661±0.46per centrespectively. By optimizing the emulsifying conditions with0.522±0.88per cent ofemulsifier, emulsifier ratio of1.18:1, the temperature of71.5℃, the measuredembedding rate is44.71±0.66per cent.Through differential scanning calorimetry,when the temperature increased to104.35℃, the decomposition of microcapsule began to occur.3..For the purpose of preparing folate microcapsule blend oil, the authorconducted mixing process of50per cent corn oil,25per cent peanut oil, and25percent walnut oil. The result shows the ratio of monounsaturated fatty acids andpolyunsaturated fatty acids is1:1. Furthermore, this research determined the acidperoxide value under different time, temperature, amount of antioxidant, and stirspeed. Simultaneously, by opitimizing the optimum mixing time30min,thetemperature20℃,antioxidant additive rate125mg,Stirring speed1250pm,research onperoxide value and acid value of blend oil at different storage temperature, storageconditions dark glass bottles, and storage time in the12months or less has beenconducted. As a result, the optimal folate retention rate of55.3±0.08per cent isobtained. |
