Abstract/Summary:
The subject of the study was the effect of superfine grinding on crops physicochemical property and functinal chariters that used soybean, corn, and germinated brown rice (GBR) as raw materials. Further more, the research developed a kind of composite grains powder which contains high protein, dietary fiber and GABA based on the pneumatic superfine grinding technology. The main results were as follows:In order to obtain high content of GABA, the experiment studied the optimum conditions of GBR. Effected of soaking temperature, soaking time, germination temperature and germination time on GABA accumulation in GBR were investigated. The influence factors were optimized by response surface methodology:soaking temperature was35℃, soaking time was12h, germination temperature was32℃, and germination was19h. On the condition, the content of GABA was115.16mg/100g, germination rate was92%.The effect of the main components dissolution, physical and chemical properties of the superfine communication technique on soybean powder, corn powder and GBR powder was studied. Jet milling on soybean powder, corn powder and GBR powder, the average particle size were14.67μm,13.78μm,12.33μm, respectively, within the scope of the superfine powder’s particle size. Jet milling on soybean powder, corn powder and GBR powder had significantly effect on SDF dissolution. The content of SDF in soybean superfine powder increased by106.34%than that in mesh screen of soybean powder was80-100. The content of SDF and starch in corn superfine powder increased187.84%,52.73%than that in mesh screen of corn powder was80-100respectively. The content of SDF and starch in GBR superfine powder increased by118.27%,45.94%than that in mesh screen of GBR powder was80-100respectively. Comparative studied on the soybean superfine powder with mesh screen of soybean powder was80-100, the results showed that apparent density of soybean superfine powder increased by166.67%, the angle of repose and slip angle increased by32.5%,37.14%respectively, the WHC increased by159.43%and soybean superfine powder’s solubility at100℃maximum was78.67%, increased by137.53%. Comparative studied on the corn superfine powder with mesh screen of corn powder was80-100. the results showed that apparent density of corn superfine powder increased by65.71%, the angle of repose and slip angle increased by38.46%,39.47%respectively, the WHC increased by107.72%, and corn superfine powder’s solubility at100℃maximum was73.85%, increased by129.76%. Comparative studied on the GBR superfine powder with mesh screen of GBR powder was80-100GBR, the results showed that apparent density of GBR superfine powder increased by88.46%, the angle of repose and slip angle increased by26.19%,40%respectively, the WHC increased by46.67%and GBR superfine powder’s solubility at100℃maximum was78.69%, increased by108.28%. Microscopic structure of soybean powder, corn powder and GBR powder by scanning electron microscope (SEM) were observed. The results showed that the content of oil between soybean superfine powder particles decreased significantly, small volume quantities in corn superfine powder increased significantly. GBR superfine powder’s surface presented flake structure, looser structure and had more and larger pores.The influence of superfine grinding on soybean powder’s, corn powder’s and germinated brown rice’s oil holding capacity (OHC), cation exchange capacity (CEC). pancreatic lipase activity inhibitory, glucose absorption capacity (GAC) were studied. The results showed that superfine grinding had significant effect on functional properties. Soybean superfine powder’s OHC increased by169.77%than the mesh screen of soybean powder was80-100. CEC increased by18.34%, pancreatic lipase activity inhibition increased by44.42%and its GAC increased by50.53%under the concentration of glucose was100mmol/L. Corn superfine powder’s OHC increased by199.05%than the mesh screen of corn powder was80-100, CEC increased by17%, pancreatic lipase activity inhibition increased by69.22%and its GAC increased by55.23%under the concentration of glucose was100mmol/L. GBR superfine powder’s OHC increased by294.11%than the mesh screen of GBR powder was80-100. CEC increased by22.28%. pancreatic lipase activity inhibition increased by71.18%and its GAC increased by44.31%under the concentration of glucose was100mmol/L.The ripening soybean superfine powder, corn superfine powder and GBR superfine powder as raw material, amino acid complementation in soybean superfine powder, corn superfine powder and GBR superfine powder was studied. The results showed that the proportion of soybean powder, corn powder and GBR powder was1:3:3, then amino acid score was99.27. The optimum formula of compound nutrion of grains powder was determined by orthogonal test, The results showed that compound powder (the proportion of three powders was1:3:3) as basic quality, that with sesame powder8%, powdered sugar10%, skim milk powder16%, MCC0.25%, xathan gum0.40%, NaAlg0.25%, the compound nutrition powder had the highest sensory evaluation score, which was93.63. Then the content of protein was17.5%, dietary fiber was7.56%, GAB A was57.58mg/100g, which with strong flavour, mellow mouthfeel and rich nutrition, it was a kind of the blunt ready compound grains powder.
