Camellia oil contains unsaturated fatty acids as high as 90% above, rich in oleic acid and linoleic acid, and camellia oil can prevent hypertension, hyperlipidemia and delay the atherosclerosis. It has lots of vitamin E, squalene and flavonoids substances, which has an important effect on anti-ageing, anti-cancer, anti-inflammatory. Selenium is one of the trace necessary elements to human body. As an important part of the body’s glutathione peroxidase, it can eliminate harmful free radicals in the body and has the oxidation resistance. Selenium can protect cardiovascular and heart health, improve the function of organs, protect vision and liver, fight decline of age, and has the function of anti-cancer. Selenium and camellia oil has the oxidation resistance, so enriched selenium camellia oil has dual effect on cardiovascular disease. Enriched selenium camellia oil will not only strengthen the health care function, and prove economic value, but also can solve the problem of local selenium deficiency.In this paper, different enriched selenium method namely enriched selenium fertilizer method and artificial enriched selenium method were used to produce different enriched selenium camellia oil. Comparing with control group, we study the sensory characteristics and functional characteristics of camellia oil by different method of se-enriched. The relationship between different se-enriched method and camellia oil properties were discussed. In addition we also studied how the selenium fertilizer impact on the growth of the camellia.The main results were as follows:(1) Se-enriched fertilizer improved the selenium content of camellia seed kerne (p=0), and increased the content of tea seed kernel protein. Selenium content of seed kernel in contrast group was 0.2394 mg/kg, selenium content of se-enriched fertilizer seed kernel is 0.5173 mg/kg on average. There is no significant difference between fat and ash content. Se-enriched fertilizer has no significant influence for camellia production and camellia seed yield, but has significant effect on the camellia seed kernel.(2) Se-enriched fertilizer and artificial enriched selenium both increased the selenium content of camellia oil. The content of se-enriched fertilizer of camellia oil is respectively up to 0.0934 mg/kg, which is 3 times of selenium content of control group camellia oil.The content of artificial se-enriched of camellia oil is respectively up to 0.3356 mg/kg, which is 10 times of selenium content of control group oil.(3)The colour and lustre of the control group of camellia oil and camellia oil of se-enriched fertilization is clear, and they have the fresh scent of camellia oil, and their sensory properties are better than artificial se-enriched camellia oil.(4) Saponification value and iodine value of different enriched seleniumn camellia oil method are no significant differences (p<0.05). Peroxide value and acid value of se-enriched group were lower (p>0.05).there is a direct correlation of selenium and camellia oil oxidation stability.The higher selenium content, the better oxidation stability.(5) Different enriched selenium method of camellia oil has a certain influence on the oxidation stability of camellia oil. Based on the oxidation induction time and oxidation stability index, oxidation stability of the two se-enriched treatment group is higher than the control group. In the two se-enriched treatment group, the oxidation stability for artificial enriched selenium camellia oil is higher. Artificial enriched selenium camellia oil has strong oxidation stability at room temperature, high temperature, or the condition of light. Compared to other common antioxidants 3,4-hydroxy benzene acetic acid, gallic acid, quercetin, enriched selenium camellia oil mixed with ordinary camellia oil, its oxidation resistance is weak. So se-enriched camellia oil can priorityly add selenium, with auxiliary antioxidant function.(6) Selenium fertilizer will not change the composition of fatty acids, tocopherol, stigmasterol and sitosterol, but play a role in the accumulation of diagonal squalene and tea polyphenols. And artificial selenium-rich will not undermine its fatty acid composition, stigmasterol sitosterol, and polyphenols, but can cause damage to copherol, which is to 39.5%.
