Anhua brick tea is raw dark green tea, made of different kinds of tea, which grow in special area and is suitable for Anhua brick tea, with a particular processing technology.such as Yuntai Mountain big fresh tea and good scherophylla leaves. it can be used as a raw material which could produce all kinds of Brick Tea with a particular processing technology.Aiming at the unqualified original tea, which will affect the quality of the products, this thesis comes up with two kindsof secondary erme ntation including heating and cooling. The thesis proved that wih the different secondary fermentations, the Fuzhuan tea and Huajuan tea will have a different quality and taste, and confirms the major elements of Anhua black tea, then make a research of how to optimize the skill of secondary fermentation, such as the time and temperature of fermentation, the thickness ofthe pile and the way of baking. The results are as follows:1.The way of cooling fermentation is suitable for Fuzhuan tea, it has a better flavor with such fermentation. It will be the best with a piling height at110cm, a water content at26%in120hours. This skill is available for the problem of the muddy color, bitter taste, smell and the color of leaves, which will meet the requirements of consumers.2.The way of heating fermentation is suitable for Huajuan tea, It will be the best with a piling height at110cm, a water content at22%in5hours, which can develop its color、smell and flavor. In the aspect of biochemical component, the content of tea polyphenol and Amino acids decrease and the content of phenol ammonia increases apparently, so that the tea will taste good. Other elements such as Ester type catechins and the caffeinum will decrease and the Simple catechins increases and the content of the flavones remains the same. As a result, consumers will like it better.
