Microwave heating has become a good helper for cooking, heating and defreezing food because of its high efficiency,energy saving and environmental protection. Moreover,Microwave heating has been widely used in daily life. However,The safety of microwave heating food has been questioned in network and media with the fast development of microwave industry. In order to detect microwave food security quickly and effectively, The thesis apply the combination of infrared spectroscopy and principal component and cluster analysis to study.The difference of infrared spectroscopy of the microwave food heating for a several different time is subtile. it is difficult to tell the difference just from the spectrum. The paper apply the combination of infrared spectroscopy and principal component and cluster analysis to analyze the microwave heating and traditional heating food. It can preliminary judge whether microwave heating food is harmful by viewing whether the microwave heating food and traditional heating food are clustered together.The major result of experiments are as follows:(1)It is found that the spectrum of cups inside has several absorption peaks more than that of cups inside by comparing the infrared spectra of cups inside and outside,it means that cups inside containing some additional material more than cups outside. Then the thesis analyze the NIR of water filled in different cups and glass heating by microwave and traditional ways. It is difficlut to tell the difference from their one-dimensional spectrum. However,It is clearly to see that water filled in cups and glass heating by microwave are classified in different parts by analyzing their spectrum in principal component and cluster analysis.(2)The thesis analyze the MIR spectra of three kinds of vegetable oil(canola oil,peanut oil,corn oil)heating by microwave and traditional ways. It is difficult to tell the difference from one-dimension spectrum. Then the thesis analyze the spectra data in principal component and cluster analysis. It is found that canola oil heating by microwave and traditional ways are clustered together,while peanut oil and corn oil heating by microwave and traditional ways are classified into two parts. so it can draw the conclusion that canola oil heating by microwave and traditional ways are the same,while peanut oil and corn oil are not.(3)The thesis analyze the IR spectra of three kinds of food(potatoes,carrots,lettuce) heating by microwave and traditional ways. It can tell the difference from one-dimension spectrum,However,the difference are not in regular pattern.so it cannot judged in right ways. By analyzing the spectra data in principal component and cluster analysis. It is found that carrots and lettuce heating by microwave and traditional ways are clustered together. while potatoes heating by microwave and traditional ways are classified into two parts. so it can draw the conclusion that carrots and lettuce heating by microwave and traditional ways are the same,while potatoes are not.
