Glycidyl fatty acid ester is esterfication product of glycidyl and fatty acid. In 2009, Bf R confirmed that refined vegetable oils contain certain amount of GEs for the first time. It is believed that GEs may be metabolized into genotoxic glycidol in vivo after ingested, but its toxicity is still not clear. Thus, the safety issue of glycidol esters existing in edible oils gained wide public attention. This study used LC-MS to detect the contents of glycidyl ester s in edible oils and fats, the regularity of glycidol esters generated in the refining process is obtained, and established the risk assessment model of glycidol esters in edible oils and fats.The results are as follow.1. The content and composition of glycidol esters in 16 kinds of edible oils were determined by liquid chromatography-mass spectrometry method, the effect of fatty acid composition and glyceride composition of vegetable oils on the generation of glycidol esters was investigated.The results showed that: The contents of glycidol esters in common edible oils were less than2 mg/kg, such as soybean oils and rapeseed oils. In addition to palm oils, the content of glycidol esters in rice bran oils were quite high(8.27-27.83 mg.kg). Glycidol esters is a kind of endogenous contaminants, its composition is similar with the fatty acid composition of vegetable oil; Diglyceride content could be one of the factors influencing glycidyl ester content in the refined vegetable oil.2. In the model system of diacylglycerol oil preparation and process, the effect of oil refining on glycidol esters generation was investigated. The results are: Enzyme catalysis and molecular distillation process does not promote the generation of glycidol esters; The bleaching treatment can reduce glycidol esters content in the oils; The deodorization process is the key to generate glycidol esters. The generation regularity of glycidol esters under different temperatures was obtained by heat treatment simulated deodorization. When the deodorization temperature is below 210 ℃, the control effect of glycidol esters in oils is significant.3. The risk description of glycidol esters were analyzed by the Crystal Ball software. It provides references for the risk assessment of glycidol esters by intaking edible oils for Chinese residents. The simulation results show that: The average MOE value of glycidol esters from edible oils was 1.34E+03, the MOE value of 75% and 97.5% exposing condition were 4.33E+03 and 1.76E+02. From the model analyzing, it indicated that the risk level of glycidol esters by intaking edible oils is very low when the exposing condition at ordinary level(75% exposing condition).
