Wort kettle is one of the most important equipment in beer manufacturing. The design of wort kettle has direct effect on the beer quality and the consumption of energy. Wort boiling is a complicated heat-transferring and phase transition process. This paper has researched on the heat transmission and flow of fluid and has carried out virtual analysis with the help of CFD, expecting to find an optimized designing method of wort kettle. A secondary steam recycling system has been designed, which displays obvious economic benefit.This paper has researched mainly on the following aspects:1. The computation and analysis on the heating transmission coefficients on the various heating process of wort boiling. The initial designing of wort kettle has been finished.2. A secondary steam recycling system is designed to reduce the energy consumption in the boiling process, considering the abundant steam produced during pressure boiling.3. A flowing model of wort kettle is proposed and the computation method of convectional circulation speed is derivated .4. The heat transfer coefficients and area is inspected according to the computation method, as example the wort kettle of 60M35. With the help of CFD, the temperature and flow distribution of heating pipe and wort kettle are acquired and compared with the experimental data, which indicates a similar result.6. The computation method of wort kettle and improvement of structure are proposed through the above analysis method.
