Litchi are sub-tropic fruits belonging to sapindaceae which are difficult to storage. It's hard to preserve them because physiological activities of litchi are bloom and they are easy to turn rotting. There are about 20 percent losses because of decay every year. So the rule of biochemical changes of postharvest litchi and the technology of litchi preservation are studied in many academies and universities in China and abroad. Although they obtain some achievement, it has important meaning to develop the technology of litchi preservation.Rhizomes of canna comprise abundant starch, protein, amino acid and many kinds of microelement. Cannas natural antistaling agent is innoxious, scentless, edible and safe because it won't be left on the fruits after preservation.Fruit preservative bags making of nonwoven fabrics are used in this paper, at the same time, cannas natural antistaling agent also is used during low temperature storage of litchi. The characteristics of fruit preservative bags making of nonwoven fabrics are good airproof and permeability, simple configuration, inexpensive cost and friendly to environment. The method of cannas natural antistaling agent, blanching, sodium sulfite, sodium thiosulfate and garlicin are used during storage of litchi of "guiwei" and "nuomici". The contents of reducing sugar, total sugar, titratable acid, vitamin C, total soluble solids and moisture content are also mensurated during storage. Experimental results indicated that the longest preservative time can be two months and the change of nutritional content isn't obvious. The cannas natural antistaling agent is separated by column separation methods and recrystallization. Fraction Ⅱ-2 is analyzed by GC-MS. Three compounds which are n-Octadecane, n- Heptacosane and Decanoic acid heptyl ester were identified.A new way of litchi preservation is provided in this paper. The method will produce effect about to storage of litchi and some theory of litchi preservation also can be found in this paper.
