This paper consists of five chapters.The first chapter is summarize.In the first chapter, the concept of origin protection,the development at home and abroad,the significance,the relevant literature about origin characteristics,the necessity of the research about characteristic of apple and the study in this paper.In the second chapter, the content of Potassium, Calcium, Sodium, Magnesium, Copper, Zinc, Iron, Manganese and Phosphonium in different species apples produced at different region were determined and analysed with flame atomic absorption spectrometry (FAAS) and ICP-AES. It is found that there is significant difference in some elements of apples that are same type but come from different regions and the difference of some other elements is not significant. It can provide science foundation to evaluate the production area and to identify the characteristic.In the third chapter, Fourier transform infrared spectrum is used to determine the samples from different regions, characteristic peaks in IR fingerprint spectr are identified and comparative analysis. Result:There are some differences between absorption frequency and relative intensity. For the identification of apples from different production areas, IR fingerprint spectr is an effective method.In the fourth chapter, Isotopic analysis applies to fruit research, we make use of stable isotope ratio mass spectrometry to determine and analyse the carbon and nitrogen isotope ratio of apple in Hebei and Shandong.. The average of isotope ratio is-26.937‰,-3.871‰and -26.046‰,-2.186‰respectively.In the fifth chapter, to develop a method of discriminating the fingerprint of apple by HPLC.for the identification of apples production areas. The samples were extracted with water and deposited with ethanol, then purified by an solid-phase extraction column. The HPLC separation was performed with a gradient elution program of acetonitrile and water (containing 0.05% phosphoric acid) as mobile phase. The identification and quantification were done with UV spectrometry. Compared the fingerprint. chromatograms of apples from two different areas, but for some reason, the experiment did not achieve.
